  1. Grind cookies into crumbs using a blender.
  2. Melt the butter and pour it into cookie crumbs. Mix well so that the mass is homogeneous.
  3. Soak gelatin when it swells, heat over low heat until it is completely dissolved without boiling.
  4. In a blender bowl send condensed milk, cottage cheese, cream and mix. Add gelatin and mix again so that the mass is homogeneous.
  5. Prepare a baking dish, line it with a film, put a mixture of cookies and butter, smooth, forming the sides.
  6. Pour the curd-milk mixture on the base and put the mold in the refrigerator for at least 5 hours.

Caramel with cream cheese

This baked cheesecake with condensed milk is prepared with Philadelphia cream cheese. Caramel is not mixed with the filling until smooth and stands out with darker waves.

What do you need:

  • Philadelphia cheese - 700 g;
  • icing sugar - 150 g;
  • shortbread cookies - 250 g;
  • brown sugar - 50 g;
  • condensed milk - 380 ml;
  • butter - 160 g;
  • fat milk (cream possible) - 3 large spoons;
  • gelatin - one and a half tablespoons.

Stages of making caramel cheesecake without baking with condensed milk:

  1. Crush cookies in any way possible: in a blender, meat grinder, food processor. Melt the butter (120 g) and combine with the crumbs, wait until it cools, do not pour hot. Knead the resulting mass with your hands.
  2. Lay friable dough on the bottom of the milking baking dish lined with parchment. Tamp, make small sides. Put in the refrigerator for 30 minutes.
  3. Pour gelatin with cold milk or cream, mix, allow to swell for 10 minutes.
  4. Combine the Philadelphia cheese with icing sugar and beat down with a whisk until a homogeneous mass is obtained. If you do this with a mixer, cracks may appear on the surface of the dessert.
  5. Put condensed milk in a pan, add the remaining butter, pour sugar and put on moderate heat. Bring to a boil, stirring constantly, cook for another 7 minutes with a slight boil, not forgetting to stir so that the caramel does not hit the bottom. As a result, it should acquire a light caramel color. To get a richer shade, cook another one or two minutes.
  6. Dissolve gelatin completely in a water bath, but do not bring to a boil.
  7. When the gelatin has cooled, combine it with the cheese mass and mix thoroughly. Then add the caramel mixture and combine, making several movements with a whisk or a spoon, so that a homogeneous mass does not turn out.
  8. Put the resulting filling on the base of the cookies, wrap with cling film, put in the refrigerator for 6 hours. Garnish the cheesecake with grated chocolate or fruit slices.
