Creamy pancakes

Pancakes can be considered a universal dish. From what they just do not cook, and even how many dishes are made on their basis - do not immediately count. Among the many recipes, pancakes on cream occupy a special place, because they turn out to be unusually delicate and literally melt in the tongue.

To prepare 1 serving of cream pancake dough, you will need products such as:

  1. cream of any fat content - 0.5-1 liter;
  2. butter - ΒΌ kg;
  3. egg yolk - 6 pieces;
  4. premium flour - 500 g;
  5. sugar or icing sugar - 120 g;
  6. some vegetable oil to grease the pan.

The cream pancake recipe is different in that the dough is made with cream, not milk, and only yolks are used. But there are recipes that include protein. In fact, crepes on cream can also be made yeast, similar to regular pancakes that are cooked on a dough. Here are some options for making dough.

Option 1

Mix the yolks with granulated sugar and grind until white. Then combine with melted butter, 1 cup cream and flour, taken in an amount sufficient to knead a homogeneous dough without lumps. Knead thoroughly and, stirring constantly, add a thin stream of cream until a dough of the desired density is obtained.

Option 2

We make pancakes on cream as described above, but before introducing the rest of the cream, it is recommended to whip them with a mixer in a thick foam. For this option, the higher the fat content of the cream, the better, because it will be easier and faster to whip to the desired consistency.

Option 3

Cream pancakes will turn out to be lace, if the rest of the cream is whipped with whites. The resulting mass is introduced into the thick part of the dough in small portions, each of which is gently and thoroughly mixed. It is very important to mix the dough so that the air bubbles remain in it, so it is better to make the base more liquid than in the previous versions.

A little secret to simplify the task: spread the dough not on 1 glass of cream, but on 2/3 of the total volume, but at the same time leave the amount of flour unchanged.

Option 4

Those who like thick pancakes can recall the recipe for pancakes with soda and add it to the cooked dough. Soda can be used slaked or not, while pancakes will turn out different tastes. Soda is introduced into a thick dough, after which it is left for 15-25 minutes and only after that it is diluted to a liquid state.

Option 5

To make yeast pancakes, prepare a dough of 100 ml cream, 50 g flour and 10 g yeast. Let the yeast disperse in the warmed cream, then add the flour, knead and place in a warm place for an hour. Then combine the dough with the base of the pancake dough prepared according to the method described above. Yeast pancakes are always thicker. If you put the filling in the middle and fold the pancake in half, it will look like a cheburek. This trick can be used to decorate the table or when you want to serve a familiar dish with a special charm.

Bake pancakes

Pancakes are baked on cream, as usual - on a hot pan, lightly greased with vegetable oil. Since the dough contains butter, you only need to grease the pan at the beginning.

Finished pancakes are removed, each is greased with butter, and stacked in a pile one on one, or curled up.

A little secret: if you like very tender pancakes, then after being ready, put them all in a stack in the oven, heated to 50-80 degrees for 10-15 minutes. In the old days, pancakes were placed near the open hearth of the furnace. During this time, the oil is absorbed. I assure you that you cannot get such tender pancakes without additional heating.

Topings and toppings

Hot pancakes are served with cream, with sour cream, jam, confiture, condensed milk, baked chocolate or any other additive. They are most delicious with sweet fruit or berry fillings.

Based on this test, you can make pancakes with seasoning. To do this, add grated apples or bananas to a coarse grater. Submit liquid honey to them, it best complements and emphasizes the taste of fruits.
