- Add two tablespoons of lemon juice and cook the future caramel until it turns yellow.
- Pour the sugar mass onto a silicone mat and begin to form a soft lump from it. You need to do this first with a rug, and then with your hands. Do not forget to wear gloves, otherwise you risk getting burned.
- Take the caramel in your hands and begin to stretch it. When it turns white, and you hear characteristic clicks, proceed to the formation of the cane.
