Mushrooms salad: cooking options and ingredients

Today's article will be devoted to fans of mushroom dishes, or rather salads.

Salad "Mushrooms" - an excellent dish, cooked in haste. There are several variations of this salad.

We will also introduce you to other mushroom salads, which we do not often remember when preparing a festive table.

Pickled Mushroom Salad

To prepare it, we need:

  • can of peas;
  • several hard boiled eggs;
  • a glass of mayonnaise, if possible it is better to use homemade;
  • 200 grams of canned mushrooms (you can take any, but not champignons);
  • three hundred grams of hard cheese;
  • onion head or a bunch of green.

We begin to prepare the salad "Mushrooms" with pickled mushrooms.

Cool already boiled and peeled eggs and finely chop them into cubes. Mushrooms are cut into small pieces, if they are large. If the jar has small mushrooms, you do not need to cut them.

Dice the cheese too. Onion finely chopped.

Mix all the ingredients and season with mayonnaise. Before serving lettuce, try it on salt, salt if necessary. You can sprinkle with finely chopped green onions as a decoration for the mushroom salad.

Fried Mushroom Recipe

Perhaps it is difficult to find a cooking recipe easier than that with fried mushrooms. In this case, you can use any mushrooms, including champignons.

  • 0.5 kg of mushrooms;
  • half a lemon;
  • a few tablespoons of vegetable oil;
  • greens (you can use any, but dill is best);
  • salt;
  • ground pepper, you can use white or black.

To start, wash and peel the mushrooms. Then we dry them on a paper towel. This is the case if you are preparing a salad with champignons. In the case of forest mushrooms, the food preparation process will be somewhat delayed. Forest mushroom must be cleaned and rinsed well in several waters, and it also needs to be boiled before frying.

After that, we put parchment paper in the preheated oven, and put the mushrooms on it. Pour them with sunflower oil, pepper and salt. Bake the mushrooms until they become soft. Vegetable oil can be replaced with olive.

After cooking, we take out the mushrooms, put them on a plate, pour them with lemon juice, the remaining oil. If necessary, salt and sprinkle with finely chopped dill. You can add garlic if desired.

"Mushrooms in the meadow"

In search of the recipe for this salad, you can stumble upon its different options: "Glade of mushrooms", "Mushrooms on the lawn." But if you carefully read their cooking recipe, you can understand that they are somewhat different from each other.

So, the products that we need to prepare the salad "Mushrooms in the meadow":

  • 1 jar of canned champignons;
  • a bunch of fresh dill;
  • a few pieces of carrots;
  • 2 processed cheese;
  • 2 pickled cucumbers;
  • 2 chicken eggs;
  • 300 g of meat;
  • 2 potatoes;
  • mayonnaise;
  • 1 head of onion.

Spices (salt, pepper) can be added to taste.

We begin to prepare the salad "Mushrooms in the meadow."

Boil carrots with potatoes in salted water until tender. Cool, clean and rub on a medium grater.

Do the same with eggs and cheese. But we rub the cheese on a fine grater. To prevent it from breaking, first put it in the freezer for about ten minutes. After that, the cheese will grate easily and quickly.

Cut boiled chicken into cubes.

Drain the liquid from the jar of mushrooms.

Dice pickled cucumbers.

Cut the onion into thin rings and pour over boiling water to get rid of the characteristic bitter aftertaste. After pickling it in a solution of water and 7% vinegar 1: 1 for five minutes.

The bottom of the dish in which you will form the salad, you need to grease with vegetable oil. The dish should be flat and in no case deep, since in the future the salad must be turned so that the bottom layer becomes the top one. We spread the first layer of mushrooms with their caps down (as densely as possible to each other).

We put pickled onions on top of them.

At the same time, do not forget that each layer of salad is coated with mayonnaise.

Next, put the grated carrots, and on top of it - pieces of meat.

The next layer lay pickled cucumbers. On them are eggs, then grated potatoes and cream cheese.

We send the finished salad overnight to the refrigerator so that it is well saturated.

After we get it, with the help of the second plate (salad will be served on it), turn it over so that the mushrooms are on top. Now sprinkle the top layer with finely chopped dill. The dish can be served on the table. In appearance, the salad resembles a mushroom glade, where the name comes from.

Salad "Mushrooms in the forest"

It is prepared quickly and easily.

Products:

  • two chicken eggs;
  • one hundred grams of crab sticks half a small pack;
  • three hundred grams of champignons;
  • onion head;
  • mayonnaise for salad dressing;
  • sunflower oil.

To start, wash and clean the mushrooms. Then peel the onion. We cut both ingredients and send to fry.

We cut the crab sticks into cubes and send them into a deep container.

We do the same with boiled and chopped eggs.

To them we add the fried mushrooms with onions.

Mix all the ingredients and season with mayonnaise. If necessary, you can still salt it. Remember that crab sticks and mayonnaise themselves have a fairly salty taste.

Egg mushrooms

This dish can be attributed to appetizers rather than salads. Cooking for four people.

Ingredients:

  • ten pieces of chicken eggs;
  • a bunch of fresh parsley;
  • one jar of cod liver;
  • brewing black tea without additives;
  • mayonnaise.

Boil hard-boiled eggs and cool them.

We clean and cut so that the upper part later serves as a mushroom hat.

We get the yolks. Next, brew strong black tea. We filter it from the tea leaves into the pan and put the cut egg whites in it. We put on fire and boil for about fifteen minutes. During this period of time, the protein should dye brown.

We start preparing the filling for the egg mushrooms.

To do this, in a separate container, knead the yolks together with the cod liver. A little can be salted. If such a filling does not suit you, then you can make it mushroom.

To do this, take:

  • one onion;
  • sour cream or heavy cream;
  • frying oil;
  • 200 grams of champignons.

Mushrooms are cleaned and chopped in random order. We do the same with onions. Fry both ingredients in sour cream or cream. Do not forget to pepper and salt them at the end of cooking.

When the mushrooms are ready, they must be left in a cool place. The cooled ingredients should be grinded using a meat grinder. The blender will not work for us, as it will turn mushrooms into gruel. After that, add the yolk to the ground mushrooms and mix. Everything, mushroom filling is ready. Now the salad in the form of mushrooms and to taste will match its name.

At the last stage, we put parsley leaves on a plate, and between them we place empty squirrels in which we spread the filling. Cover them with brown caps from above. The salad is ready, it can be served on the table.

In general, the mushroom salad recipe can be changed as desired. The main thing in this dish is that pickled or fresh mushrooms are present.
