Blueberry jam

Every summer, thousands of people go to the forests in search of berries. What could be tastier than freshly picked blueberries, which contain the aroma of the forest, drenched in milk, with a large piece of white bread? Of course, it is good to enjoy delicious berries in the summer, however, do not forget about winter. Prudent housewives must make blueberry jam and roll it in jars. But in winter it will be possible to open this jar and spread delicious jam on bread and butter or drink a sweet morsik. In addition, blueberries (jam or fresh berries) are very beneficial for vision.

How to make blueberry jam?

First you need to clean the berries brought from the forest from litter: leaves, small twigs and insects. Then they should be washed in a colander and let the water drain. Blueberry jam is made from the calculation: a kilogram of sugar per kilo of berries. Sugar syrup is prepared - the sugar is transferred to the pan and poured with a glass of water. Turn on a small fire and boil the syrup, stirring constantly, until the crystals are completely dissolved. Then lay the washed berries, mix them and add a little fire. When the blueberry jam boils, the fire is reduced to a minimum, and after five minutes it is completely turned off. They prepare cans - they are washed with soda or laundry soap, thoroughly rinsed and sterilized over steam. Half-liter jars will have enough ten-minute processing, banks at 0.75 liters will require at least a quarter of an hour. Then the hot jam is laid out in jars, covered with boiled lids and rolled up.

Blueberry Jam with Citric Acid

For jam you will need: 1.5 kg of sugar and one kilogram of berries, a glass of water and a third of a teaspoon of citric acid. The berries are picked, laid on a metal colander and put it on a pot of boiling water for 4 minutes to steam the blueberries. Dilute sugar with water in a saucepan and prepare sugar syrup. Prepared berries are laid there and cooked over medium heat for about 5 minutes after boiling, constantly removing foam. Turn off the fire, add citric acid to the jam and roll it into jars.

Harvesting blueberries for the winter is not limited to one jam. This berry can be candied or made from compote. Compote will require three-liter jars, sugar and blueberries, based on 1 kg of berries and 0.5 kg of sugar per can. Lay out the peeled and washed berries in jars. A pound of sugar is poured with a liter of water, boiled until it dissolves, and the syrup is transferred to a jar. They let it brew for 10 minutes, after which they add boiling water to the neck. The jar is immediately closed with a lid and tightened.

Blueberry jam is delicious, and candied berries are even tastier. In addition, it turns out to be thick and viscous as a jam, with a rich taste and aroma.

A kilogram of fresh berries will require one and a half kilograms of sugar. The washed and peeled berries are placed in a blender and ground in mashed potatoes. Sugar is poured into it and grind everything to a homogeneous mass. Candied berries are transferred to washed and sterilized jars and rolled tightly. Ready blueberries are stored in a cool place.

This cooking recipe can be slightly modified, leaving the main ingredients: 1 kg of berries and a half kg of sugar. The berries are cleaned of litter and rinsed. Knead them with a crush and fall asleep with sugar. Then mix and let the blueberries stand. After an hour, mix again and see if the sugar has dissolved or not. When it dissolves, the berry mass can be placed in jars.

You can make a five-minute jam from a mixture of blueberries and strawberries. Berries are cleaned of litter and mixed in equal parts: 50% blueberries and 50% strawberries. A kilogram of berries and a kilogram of sugar and 1.5 cups of water are taken. Sugar is poured into a saucepan, poured with water, stirred, slowly cooked syrup and the berries are poured into it. When the jam boils, reduce the heat, remove the foam and cook for 5 minutes.
