Pitted cherry jam
For cooking you will need
- cherry fruits with seeds - 3 kg;
- granulated sugar - 3 kg;
- water - 0.5 l.
First you need to sort through the berries, and then thoroughly wash them. Following this action, it is necessary to prepare sugar syrup. To do this, you will need two ingredients such as sugar and water. Put water on the stove and wait until it boils. After that, pour sugar into it, but not all - you only need a little more than two kilograms - the rest will go for completely different purposes. As soon as you add sugar, let the syrup boil a little more (about a minute) and after that you can remove it from the stove.
Now pour the berries with syrup and leave the mass to infuse for twelve hours.
Once the time allotted for the insistence has passed, you will need to proceed directly to the cooking process itself. To do this, put the cherries in a bowl the size of which corresponds to the volume of the fruit, pour in the remaining sugar and then begin to cook over medium heat. You must bring the mass to a boil and remove from the stove after five minutes. In this form, the cherry needs to be left for another 12 hours, after which it will be necessary to again take up the cooking process. Again, it will be necessary to put cherry jam with pits on the stove and cook over medium heat until the whole mass boils. During the second cooking, foam may appear over the syrup - it will definitely need to be removed with a spoon, otherwise the jam will be candied during storage.
At the end of cooking, remove the jam from the stove and leave it again for 12 hours. You will have to repeat the cooking procedure again, after which the jam can be rolled up in jars or simply consumed, as it will be ready.

Sweet cherry jam with pits
For cooking you will need
- sweet cherry fruits (it is better to take a white fruit variety) - 1 kg;
- granulated sugar - 1.2 kg;
- vanilla sugar and citric acid to taste.
Before you start making jam, you need to sort out and thoroughly wash the cherries. After that, each berry must be pricked with a needle. But since this process is quite monotonous, you can use a simpler, alternative way out of the situation - dip the berries in boiling water for a couple of minutes.
I would like to note that cherry jam with pits is prepared almost the same as cherry. Therefore, to start, prepare the syrup and fill them with cherries. After insisting for 4-5 hours, you can start cooking. It should be carried out over medium heat. As in the previous recipe, you will have to do it in three stages with infusion of 4-5 hours. At the very end of the last cooking, it is necessary to add citric acid - this will stop the possible process of sugaring fruits, and in order to make the aroma of jam even more bright, you need to add vanilla sugar.
