Tasty and healthy preparations: Kuban salad for the winter

One of the traditional vegetable preparations for many domestic housewives is Kuban salad. For the winter it is closed in banks, and then they enjoy the result of their labor on weekdays and on holidays. There are several options for its preparation. It can be with cabbage, with bell pepper, with cucumbers. Sometimes they add onions to it, but it happens that they do without it. The only ingredient required in all recipes is juicy ripe tomatoes. It is thanks to them that the dish turns out so bright and colorful.

The finished dish can be laid out in liter jars or choose a smaller volume at your discretion. 4 kg of tomatoes, 1.5 kg of bell pepper (best of all, if it is colored, then the dish will become more colorful) and 1 kg of onion are taken per kilogram of white cabbage. You will also need half a liter of refined vegetable oil, one and a half glasses of vinegar, salt and sugar to taste, a handful of black pepper peas and a few bay leaves.

Kuban salad for the winter is prepared in a large capacity, where it will be convenient to mix all the ingredients and further cook them. And they start the process with peeling vegetables. Then they all need to be cut. Cabbage - thin straws, bell pepper - too, onions - half rings, and tomatoes - cubes. Vegetables are combined and mixed, salted, added sugar, vegetable oil and spices, and then put on fire. In the process of heating, the ingredients should let out the juice, which will not allow them to burn. As soon as the salad begins to boil, vinegar is poured into it, boiled for several minutes and laid out in clean jars. It is advisable to sterilize them additionally for 10 minutes, after which they should be tightly closed, cooled and sent to storage in the pantry or cellar.

Another, equally tasty and colorful version of the preparation of this dish includes ingredients from the previous one, but suggests the presence of additional components. 5 kg of ripe tomatoes are taken per kilogram of bell pepper, cabbage and onions, 1.5 kg of cucumbers and 500 gr. carrots. Still need greens (a couple of bunches), a glass of salt, oil and vinegar. Of spices, you can use bay leaf and peppercorns.

Kuban salad for the winter in this version is also prepared by cutting all the vegetables and mixing them further, but only the heat treatment is carried out directly in the banks. That is, the container into which the components will be placed can be taken in plastic. Ingredients are sliced ​​similarly to the previous recipe. Cucumbers are usually chopped into thin half rings, greens are as small as possible, and carrots can simply be grated. Salt, vinegar and oil are added directly to the bowl with vegetables, and pepper and bay leaf to each jar. Then the salad is tamped in them, leaving a little space for juice on top (it will stand out during the cooking process). Banks (liter) are sterilized for half an hour, and then closed.

Those who do not like this vegetable, or who think that it is quite affordable in winter, can be advised to use the following recipe. All products are taken in equal proportions by weight (tomatoes, bell peppers, onions, cucumbers and carrots) - per kilogram. Vegetable oil will need 500 ml, and salt, sugar and vinegar - 2 tablespoons. For pungency, you can add a little hot pepper. Salad is prepared in a large saucepan, where oil is poured and fried peeled carrots cut into strips (you can use a grater). After 15-20 minutes, chopped bell pepper goes there too. After the same time - onion in half rings. Salad must not forget to constantly mix. At the end, add tomatoes (cubes), which should let the juice go, and after 10 minutes, cucumbers (half rings). Next comes the turn of sugar, salt and vinegar. After 15 minutes, the salad will be ready. It must be placed in sterile jars and closed. They can be stored for 2-3 years. But, as a rule, by the spring, nothing is left of stocks.
