Banana pancakes. Recipe

The recipe for these pancakes is almost no different from the recipe for ordinary pancakes. The difference, of course, is in adding bananas directly. But here everyone has their own preferences: someone loves more when pancakes contain small pieces of banana, while someone likes it more when bananas are completely ground to the same consistency with the dough and serve as a flavoring. Here you decide for yourself, everything is at your discretion, but if you make slices, then you should grind the bananas with a fork, otherwise - in a blender, mixed with milk. However, both methods will be described in detail below.

Kneading the dough. Method one

If you want to make banana pancakes with slices, then you should take a separate bowl and chop the bananas with a fork, but do not overdo it so that not a slurry is formed, but a semi-chopped banana. Pre-mix the eggs with sugar and salt, beat, and then add warm milk and a little vegetable oil so that the pancakes do not burn. Next, carefully sift the flour to saturate it with oxygen and remove unwanted lumps. After sifting, mix the flour with the rest of the mass. Now add chopped banana and mix. Since the banana is put in pieces, the dough will turn out liquid, so it should be left for 7-10 minutes.

Kneading the dough. Second way

In the event that you want to bake no less delicious pancakes without slices, you will need a blender. Cut the banana into small pieces, put it in a blender and add half of the total mass of warm milk, that is, about half a glass. Then whisk everything until a homogeneous consistency is obtained. Now pour the banana-milk mixture into a separate bowl, mix with eggs, sugar and salt. Do not forget to add a little vegetable oil. Add the remaining milk to the dough. In the same way, sift the flour and add it gradually until you get the perfect dough. Such a dough can be left for only 3-5 minutes, but if you are in a hurry, you can also sacrifice this time and immediately start frying.

Roasting

Photos of the banana pancakes, where they were completely baked, will be presented below, so you can understand the extent to which they are fried.

Before directly frying, grease the pan once and let it warm up. You don’t have to lubricate the pan anymore, since the dough already contains the necessary amount of oil, this will not allow pancakes to “dry” to the pan, and it will be very easy and convenient to remove them.

Take a ladle, scoop up the dough and pour it onto a pre-heated pan evenly in one place. Turn the pan in different directions to distribute the dough on it, but do not rush. Even if it doesn’t work the first time an ideal pancake shape, you still have many attempts ahead. The first side should be fried a little longer than the second. Look periodically, lifting the edge of the pancake with a spatula or knife, and if it begins to acquire a brownish color and emit a pleasant smell, feel free to turn it over. Keep the other side much less on fire, then carefully take the pancake with a knife and spatula, and then put it on a plate. After frying the first pancake, switch the fire to a weaker one. Do this until the dough is over. During the roasting, watch how the pancakes are fried, if you suddenly think that the dough is slightly thick, you can always add milk, and if, on the contrary, it is too liquid, put some more flour.
