They are soft, fragrant and delicate, have their own unique taste, and most importantly - they do not hit the pocket of their fans. Even those who are on a diet would not disdain such buns, because cinnamon helps to speed up metabolism. Preparing cinnamon rolls from puff pastry, the recipe of which is simple and clear even to a student, is quite easy and fast.
Varieties
For the most part, there are flaky cinnamon rolls in the form of curls, sometimes bagels, and even less so anything else. The difference is not in the form, not even in the filling, the whole thing is in the test. It can be yeast or not. If we are talking about the home option, then the difference in taste also adds instant dough.
Quick dough
There are many ways to cook puff pastry at home, but there are only 2 main ones: yeast and quick yeast-free. What is good puff pastry? It can be stored for a long time in the freezer, and the variety of pastries prepared from it is simply amazing. In addition, yeast-free puff pastry also applies to dietary products.
Recipe One - Yeast
To prepare puff pastry on yeast, you will need the following ingredients:
- 0.5 kg of flour;
- 1 cup of milk;
- 200 grams of butter;
- 7 grams of dry yeast;
- 2 tbsp. tablespoons of sugar.
These proportions can be changed simply by dividing or multiplying by the required amount of dough. The dough after baking will be magnificent and increase in size, thereby making cinnamon rolls from puff yeast dough an unforgettable treat.
Cooking
First you need to prepare the premium flour, carefully sifting it through a sieve. It is best to do this several times, since in this process the flour is saturated with oxygen, and the product itself will eventually be light and even more magnificent. Next, you need to add sugar, if the dough is necessary for cooking unsweetened pastries, then you need to reduce the amount of granulated sugar to 1 tbsp. spoons. The next step is to dissolve 50 grams of butter in a glass of milk, milk should be at room temperature. Yeast must be added to this mixture and mixed thoroughly. Then you need to combine flour and sugar with a liquid component and knead a fairly elastic dough that will not stick to your hands, but not very tight either. Put the finished mass in the refrigerator until completely cooled, for about an hour.
Cold butter should be put in cling film and rolled into a thin layer and carefully beat off with a rolling pin so that all lumps become a homogeneous mass. Then you need to get the chilled dough and roll it into a thin rectangle, put the butter on top, already without a film. Next, you need to cover the oil layer with the second half of the dough and put it in an envelope. Roll out the resulting design. In order for the dough to have thin layers, the process of folding and rolling needs to be repeated about 5 times, as much as possible.
Recipe Two - No Yeast
Despite the complete absence of such a baking powder as yeast, this option turns out to be no less tasty, in addition, it has some advantage in terms of diet over its counterpart. To implement this recipe, you need to prepare the following ingredients:
- 0.6 kg of flour;
- 1 glass of water;
- 2 eggs;
- 250 grams of butter;
- citric acid and salt on the tip of a knife.
The recipe has a strict priority in combining the ingredients, first flour with salt, butter, grated or finely chopped, water with citric acid, already dissolved and, of course, eggs. You need to knead quickly until the butter has melted, otherwise you will get unsweetened shortbread dough, also of mediocre quality. The finished mass must be cooled within an hour. After the dough has cooled, proceed with baking. The advantage of this recipe is that the dough does not need to be rolled out, which means that precious time is not lost.
Cinnamon rolls
To prepare puff cinnamon rolls, the recipe of which is presented below, you will need the following:
- Butter, melted - 50 g.
- Sugar - 2 tbsp. spoons.
- Cinnamon - 1 pack.
Roll out the puff pastry with a thin layer, preferably of a rectangular shape. For the filling, you need to mix the melted butter, sugar and cinnamon. Next, the filling should be laid out in a thin layer on the rolled dough layer and leveled. The layer should be rolled up and cut into pieces 2 centimeters wide, plucked on the underside of the roll, otherwise the filling may leak. Bake at 200 degrees until golden brown, about 20-30 minutes.
Large puff pastry cinnamon rolls
In order to make a large bun that is enough for the whole family and that can decorate the table, you will have to slightly change the cooking technique. The total mass of the dough needs to be rolled out a little, cut 4 circles from it with an approximate diameter of 15 cm, the thickness of the circle should not be less than 5 mm. The filling will be the same as for small puff pastries with cinnamon and sugar. Each circle must be thoroughly greased with a filling mixture, while leaving a little sugar-cinnamon mass to coat the finished product.
Each circle of dough needs to be rolled up and gently pressed on top. In order for the bun to turn out to be curly, you need to cut the roll along exactly half, but not to the end, otherwise you will get 2 separate products, leave about 2 cm. Halves of the dough should be twisted in opposite sides and the ends should be connected, so you should get an even circle. The rest of the workpieces must be done the same.
