"Negro Smile" is a very simple and incredibly tasty dessert, the preparation of which can be done even by a not very experienced hostess. The cake got its original and quite extravagant name because of its appearance - on a saturated, dark chocolate biscuit there is a layer of snow-white cream, which in turn is covered with chocolate glaze. Cake "Negro Smile" is not only not a shame to serve guests at the festive table, but you can also pamper your children with them, because all the ingredients are absolutely natural, and a dessert made with your own hands is always much tastier.

As already mentioned, the cake "Smile of the Negro" (see photo above) consists of three main layers: biscuit, cream meringue and icing. For each of them, the simplest components are required, the number of which we will indicate in the following table:

All ingredients must be fresh, otherwise the taste of the cake can be significantly spoiled. Some components sometimes replace, for example, kefir with sour cream. And when preparing the glaze, you can add a little milk or dark chocolate. Also, if desired, you can decorate the cake with nuts.

The butter intended for making the biscuit is brought to a softened state (leave it in the room for a couple of hours), after which it is cut into pieces and whipped with a mixer at high speed. As soon as the butter acquires a lush, creamy shape, add the yolks to it one at a time, without stopping whipping. After the yolks, sugar and cocoa are added to the dough, everything is thoroughly whipped. Soda is added to kefir, thoroughly mixed and poured into the butter-egg mass. At the end of the batch flour is poured. The consistency of the dough for the biscuit should be like a fritters. Prepare the surface of the baking dish in advance by making a โ€œFrench shirtโ€ - a thin layer of butter sprinkled with flour. The biscuit is baked for about half an hour at a temperature of 180 degrees and soaked in hot form.

Cooking cream and cake

For the preparation of meringue cream, use chilled egg whites - so they beat more fluffy. First, the proteins are whipped in a dry bowl with a pinch of salt until soft peaks are reached, then sugar is gradually added. Beating is carried out until a lush white mass with steady peaks is obtained. Meringue is laid out in a thick layer on a cake of chocolate biscuit, after which the future cake "Smile of the Negro" is sent to the oven for 7-9 minutes.

While the cake is baking, prepare the chocolate icing. To do this, melt all the ingredients in a water bath, mix thoroughly and bring to a boil. Cool sharply and return to the fire again, bringing the icing to a boil. This method will achieve a more delicate and silky structure. The icing is cooled to room temperature, after which it is coated with dessert and sent to the refrigerator for several hours. Ready cake "Negro Smile" is served on the table, cut into several pieces.
