Mushrooms are popular forest gifts that people have learned over the years to use for cooking a wide variety of dishes. It all depends on which product you have to deal with in this case. If we are talking about chanterelles, then they are usually accustomed to boil, and then fry or use as an additive for soup. Sometimes scented ginger umbrellas are dried or canned, turning them into homemade blanks. But many housewives do not even suspect how delicious it can be made, for example, a salad with fried chanterelles, if you slightly deviate from the usual rules. In cooking, it turns out, dozens of different cooking options for such a dish are known. For example, you can consider some of them.
Simplest option
The most popular is a salad with fried chanterelles and bacon. It is very simple to prepare and requires a minimum amount of products. To work, you will need:
0.5 kilograms of mushrooms 100 grams of smoked bacon, 2 cloves of garlic, a little greens (parsley or salad), vegetable oil, ground black pepper and 3 slices of baguette.
Preparing a salad with fried chanterelles is quite simple:
- First of all, mushrooms should be peeled, washed and cut lengthwise into 2 or 4 parts, depending on size. The smallest specimens can even be used as a whole.
- Then cut the bacon into thin slices and fry them to a crunch in a hot frying pan. Prepared foods can immediately be transferred to a salad bowl.
- In the same pan, fry the chanterelles until all the liquid that forms is evaporated. At the final stage, add a little salt.
- Take another pan and fry chopped garlic in oil in it. The remaining dried pieces can be discarded.
- In the resulting aromatic oil, fry the baguette, cut into cubes.
- Collect all the ingredients in a salad bowl, pour oil and mix well.
Ready salad with fried chanterelles must be supplemented with chopped herbs. This will give it freshness and aroma.
Original combination
Using various additional ingredients, you can cook a very interesting salad with fried chanterelles. The recipe for one of these options requires that the following products are on the desktop:
for 500 grams of fresh mushrooms, a quarter cup of walnuts, 2 cloves of garlic, salt, 1 tomato, 100 grams of smoked ham, a little ground black pepper, a tablespoon of chopped greens (parsley), 125 grams of lettuce and 5 tablespoons of peanut butter.
The whole process takes place in 4 stages:
- First, fry the nuts in a pan. Then they should be chopped and allowed to cool.
- Heat three tablespoons of oil in the same pan with garlic over low heat for two minutes. Then add mushrooms and, increasing the flame, fry them with salt and pepper for 5-6 minutes.
- Introduce the remaining components, chopped in an arbitrary way, and heat everything at minimum heat for 2 minutes.
- After that, the prepared ingredients should be collected in one bowl, add the remaining oil and mix.
Already in a plate, before serving, you need to decorate the dish with chopped nuts.
Feast of taste
Each dish should give a person not only gastronomic, but also aesthetic pleasure. In this sense, a salad with fried chanterelles and chicken can be considered an ideal option. It not only looks appetizing, but can also serve as a real decoration of the dining table. To prepare such a dish, you will need:
- for the main mixture - 200 grams of smoked chicken breast, 3 potatoes, a bunch of green onions, 60 grams of chanterelles, a tablespoon of butter and a sprig of parsley;
- for dressing - salt, ground pepper, as well as vegetable oil and balsamic vinegar in a ratio of 2: 1.
According to the cooking technology, the dish is absolutely uncomplicated:
- First, the mushrooms must be sorted, washed, chopped if necessary (if they are very large), and then fry them for 10 minutes in butter.
- Remove the poultry meat from the bone and cut into slices with a thickness of not more than ½ centimeter.
- Boil the potatoes in a peel, and then peel and cut into thin plates.
- Collect the prepared ingredients in a separate container and mix. To do this, it must be spacious enough.
- Make a dressing, for which carefully beat with a fork all the components provided for this according to the recipe.
- Transfer the main products to a salad bowl and pour them with a fragrant mixture.
To decorate the finished salad, you can use parsley (or dill) greens.
Interesting composition
There is another option on how to make a salad with fried chanterelles. A recipe with a photo in this case will be just the way, since the work uses a not quite familiar set of products:
500 grams of fresh chanterelles contains the same amount of spaghetti (or other pasta), 1 lemon, 170 grams of shallots, salt, 200 grams of Feta cheese, 2 cloves of garlic, 3 tablespoons of white wine vinegar, 30 grams of chives, a little black pepper, 15 grams of chopped parsley and 2 teaspoons of freshly chopped thyme.
The procedure for preparing such a salad is extremely simple:
- First washed mushrooms must be cut into small pieces.
- Using a fine grater, remove the zest from the lemon.
- Chop the garlic and shallots and then fry them in vegetable oil until the products are softer.
- Add thyme, mushrooms, zest and simmer all together until the moisture evaporates.
- Add salt, vinegar and pepper.
- Separately, boil pasta in salt water with vegetable oil. When ready, water should be drained, and they should be slightly dried.
- Gently add cheese, pasta, parsley and chopped chives to the mushrooms.
Such a salad is equally good both in hot and in cold form.
