To ask anyone from the 80s what sweet treat they have most loved, there will be a maximum of two answers: Anthill cake and Potato - chocolate cake from crushed cookies. Even now, with an abundance of sweets and all kinds of cakes, many children enjoy this plain-looking cake.
Preparing a “potato” is very simple: pass through a meat grinder three hundred grams of ordinary cookies (from baked milk or tea), mix with 80 grams of butter softened in heat and 6 tbsp. spoons of condensed milk, at the end add two to three tbsp. tablespoons of cocoa powder and a few drops of liquor or brandy for flavor, although if the dish is being prepared for a children's holiday, a pinch of vanilla may appear as aroma.
Carefully knead the resulting mass and form oval cakes that resemble ordinary potatoes. You can even decorate accordingly: beat a spoonful of oil with a spoonful of condensed milk to a creamy state and use a pastry syringe to draw sprouts on potatoes, which will delight the kids very much.
Chocolate in chocolate: sponge cake with icing
A chocolate brownie with chocolate cream and icing, and sprinkled with chocolate chips, is this not a cherished dream of every chocolate-drinker? Even an inexperienced confectioner is quite capable of making such a dessert: for a biscuit base, six eggs should be taken and divided into squirrels and yolks. In separate containers, beat them from 70 g of granulated sugar (for each part) to a stable foam. Sift one hundred grams of flour and mix with 2.5 tbsp. tablespoons of cocoa powder. Mix half of the whipped proteins with the yolks and flour mass, and then mix the remaining proteins, trying not to destroy the splendor of the dough.
Also in the dough you can add a generous handful of chopped walnuts, which remarkably emphasize the taste of delicate chocolate dough. Line the baking dish with parchment and grease it, pour the dough into it and bake until cooked in the oven at a temperature of 180 degrees. Remove the finished biscuit from the mold, only already completely chilled.
Cream for cake and icing for decoration
A cream for such chocolate cakes is also easy to prepare: whip 250 grams of fresh cream with 100 grams of icing sugar until lush cream, and at the end with a spoon mix one bar of dark chocolate melted in a water bath. Ready cream smear previously baked biscuit, which is cut lengthwise into two layers. Top is poured with chocolate icing. In a small saucepan mixed 4 tbsp. tablespoons of sugar and one tablespoon of cocoa powder. Then 50 grams of melted butter and 100 ml of milk are mixed with them. Put the pan on the fire, stirring to bring to the density of liquid honey. Allow to cool slightly and pour over the top of the biscuit with the finished glaze.
When the icing hardens completely, use a sharp knife to cut the resulting biscuit with cream into portioned cakes of arbitrary shape: triangular or square. For each piece on top put a large chocolate chip, you can use white chocolate for contrast. You can also use caramel or chocolate mustache as a decoration.
Chocolate hearts with souffle
Such a cake is not only tasty, but also very attractive in appearance, thanks to the design: for a beloved girl, making such a dessert is perfect! For the basics: make an ordinary 4-egg biscuit, 120 grams of sugar and 100 grams of wheat flour mixed with two tablespoons of cocoa. For baking, use a regular rectangular baking sheet covered with parchment. Further, without removing the base from the mold, pour a layer of souffle and let it completely harden. When the jelly part becomes elastic and dense, cut out hearts using a template, being careful not to damage the delicate souffle.
Next, pour each biscuit cake with chocolate on the right side, and melted white chocolate on the left. On the seam line of two colors, you can draw with color cream several small hearts or flowers.
How to cook souffle?
The tender souffle portion for the chocolate cake is usually made from sour cream. First, soak a tablespoon of gelatin in 100 g of cold water. When it swells, melt it in a water bath. Beat 500 grams of sour cream with one glass of sugar until creamy. In a separate bowl, beat two egg whites with a pinch of vanilla into a stable foam. Mix whipped cream with protein and stir, pour melted gelatin. Stir the mass vigorously and pour onto the finished biscuit in the mold.
Liquid Filled Cakes
Those who have tried this dessert know: this is unearthly bliss, a gourmet paradise! And the chefs call it “smart cake”, since in the process of baking it is itself divided into a dough base and cream. The secret here is simple: you just need to correctly calculate the heat treatment time so that the edges of the cake turn into an oil biscuit, and the liquid center remains creamy.
To prepare a cake of this kind, you must:
- Mix 160 grams of dark chocolate and butter and melt in a water bath (as an option: in the microwave).
- Beat four eggs with 5 tbsp. tablespoons of sugar in a stable foam. At the end, add four tbsp. tablespoons of wheat flour and mix gently.
- Pour the chocolate mass in a thin stream into the eggs, stirring with a whisk.
- Pour the finished dough into silicone molds for muffins or cupcakes, filling them in two-thirds.
Put the molds in the preheated oven (160 degrees) and bake, carefully following the process. In eight to ten minutes, the dough should rise slightly and cover with a light crust. After that, we pinpoint exactly two minutes and then we get the cakes from the oven. If overexposed, then the middle is baked and the dessert will not be so tasty. Remove from the molds and sprinkle the top with icing sugar, you can also decorate with mint leaves or fresh berries (strawberries, raspberries, blueberries).
Dessert without baking
The recipes of chocolate cakes (see the review for product photos) are so varied that everyone can choose the right option for themselves. So, for example, you can prepare a dessert without heat treatment, using the idea of raw food cuisine:
- Soak 300 grams of dates in boiling water for ten minutes, remove the seeds and grind in a blender.
- Grind 300 grams of hazelnuts or almonds in a blender and mix with dates, add 50 grams of honey or maple syrup to the mass, as well as 50 grams of cocoa.
Thoroughly mix the mass and spread it on a plastic wrap, cover with a second layer and roll it out in an even layer. Put in the refrigerator to cool the formation. Cream for the cake is prepared from three bananas and 2 tbsp. tablespoons of honey and 1 tbsp. spoons with a hill of cocoa powder. Grind the mass in a blender and spread on a cooled layer, removing the top layer of the film. Allow to cool for about half an hour and then cut into portions, decorating each with a whole nut. This dessert perfectly saturates, without giving a feeling of heaviness, as it happens after baking.
Banana Cakes
For those who like to use fruit as an additional filler, this recipe for chocolate cakes will be enjoyed. List of required ingredients:
- Three eggs.
- One glass of sugar, fresh milk and flour.
- 1 teaspoon of baking powder for dough.
- One hundred grams of coconut or lean refined oil.
- Five tbsp. tablespoons of cocoa powder.
- Three bananas.
- 400 grams of sour cream + 150 grams of granulated sugar for cream + vanilla on the tip of a knife.
Cooking
Mix sugar, milk, melted butter and cocoa in a single bowl until a uniform mixture, then add sifted flour and baking powder. Beat eggs separately until fluffy foam using a mixer. Stir in beaten eggs using a spoon (never a blender!). Pour the resulting dough onto a greased baking sheet and bake until cooked in the oven at a temperature of 200 degrees. Cool on a wire rack and then cut lengthwise into two layers.
Prepare the cream by whipping sour cream with sugar and vanilla, if desired, you can add yellow food coloring or two tbsp. tablespoons of cocoa, if you want a maximum of chocolate flavor. Cut bananas into circles.
A layer of biscuit to cover with half a cream and put bananas on it, then draw a small mesh of cream and cover with a second layer of dough. Cover the top with cream, leaving a little for decoration.
