"Squirrel" - a cake that is easy to cook at home

Sometimes you really want something sweet, but when you come to the supermarket and pay attention to the composition of the cakes offered there, you notice that the desire to treat yourself to a tasty snack recedes a little.

Homemade products always remain an alternative to purchased sweets, but it often takes a lot of time and energy to cook them. "Squirrel" is a cake on which the hostess will spend relatively little of her resources.

The products that are needed to make this sweet will be divided into three target categories: dough, cream and glaze.

Dough Products

β€œSquirrel” is a cake, which will not be difficult to prepare even for a young inexperienced hostess. The main thing is to carefully follow the recipe.

To prepare the dough, you need to buy the following ingredients in the same store (or even better if the products are homemade):

  • eggs (5 pieces, preferably fresh);
  • butter (200 grams);
  • granulated sugar (250 grams);
  • flour (1 cup);
  • baking powder (one bag) or half a teaspoon of extinguished soda;
  • cocoa powder (one and a half tablespoons);
  • favorite nuts (one glass, as the most common option - walnuts are used);
  • sour cream (four tablespoons, preferably fatter);
  • lemon juice (half a teaspoon).

Cream Ingredients

"Squirrel" is a cake that is distinguished by a thick, sweet, greasy cream. For its preparation, you should choose quality products:

  • cream (five hundred milliliters, it is better to take with a high percentage of fat);
  • cream fixer (four packets);
  • condensed milk (half a can).

Glaze Products

The top of the cooked treats will need to be generously poured with glaze, which gives tenderness and richness to the whole cake.

For glaze you need to have:

  • cream (200 milliliters);
  • chocolate (200 grams);
  • gelatin (10 grams).

Before cooking goodies, you must turn on the oven and set the temperature to 200 degrees on it.

Let's start creating the Squirrel cake with pastry dough.

To do this, take the eggs and separate the yolks from the proteins, put the latter in the refrigerator.

Next, add one yolk to the softened, but not liquid butter, and beat until smooth.

Add sour cream to the resulting mixture, mix thoroughly, then pour baking powder or slaked soda, cocoa and flour. It is better to mix with a blender, so the likelihood of lumps in the test is practically eliminated.

We get enough cold proteins and beat them with sugar, add lemon juice at the end of this process.

Combine the whipped mass with the dough.

Lastly, add the nuts and gently mix everything with a spoon.

Lubricate the baking dish with butter and sprinkle with flour. You can also cover the surface of the mold with parchment paper, but before that, both the mold and the baking paper need to be covered with a thin layer of butter or any kind of vegetable oil.

We put it in the oven for 35-40 minutes, after 20 minutes you can check the readiness of the cake with a toothpick or match (ideally, there should not be traces of dough on it).

Make icing

While the cake is in the oven, you can cook the icing.

"Squirrel" is a cake that can be decorated with chocolate icing, this action will give the confectionery product additional attractiveness and rich taste.

To do this, soak the gelatin in warm, but not hot water.

Next, heat the cream, but do not boil them, and dissolve the gelatin in them.

Cut the chocolate into small pieces, three on a grater and melt in a water bath or just add them to the liquid from gelatin and cream.

The resulting mass should be homogeneous, without lumps.

Final stage

Whip the cream until a thick foam, add the cream fixer and condensed milk.

The cream is ready.

Ready cake must be allowed to cool, then cut it into three equal parts and generously lubricate them with cream.

Also, not sparing cream, grease the sides of the cake.

Now it’s time for the icing to be poured onto the top cake layer and allowed to spread on the surface on its own.

The sides of the confectionery can be decorated with crumbs of cookies or crackers, and if you still have nuts, this will be an even better option.
