Tiramisu is a puff Italian dessert, consisting of cream and biscuit sticks soaked in coffee and alcohol, plus the final touch is cocoa powder.
The trivial recipe turned out to be very popular - today tiramisu is known all over the world, it has already become a household name. Along with the initial set of products, alternatives began to appear: fruit tiramisu, vegetable, vegan, dietary ... The last option is extremely popular, since the calorie content of tiramisu (classic version) is considerable - 310 kcal per 100 grams. Most of it is provided by mascarpone cheese because of its fat content. In this article we will tell you how to cook a basic dessert and its lightweight variation.

That is how the word "tiramisu" sounds in Italian. According to the idea, the dessert turns out to be loose, moist and airy - it is extremely difficult to cut it into portions, as it will creep out. If esthetics is important to you, we recommend preparing refreshments in portioned bowls. And yes, the recipe uses raw eggs. Please wash them thoroughly with soda before use:
- eggs - 5 pieces;
- sugar - 5 tbsp. spoons;
- strong coffee - 210 ml;
- Mascarpone - 375 grams;
- aromatic alcohol - 5 tbsp. spoons;
- Savoyardi cookies - 45 pieces;
- cocoa powder to taste.

Cooking Tiramisu
The calorie content of such a dessert is rather high (see above), but occasionally you can afford such a pleasure.
Separate the whites from the yolks. Beat the whites with a pinch of salt until a strong peak. In a separate bowl, beat the yolks with sugar - the mass should turn white and increase in size 3-4 times.
Mash the mascarpone and mix it in the yolks, mixing until smooth. At this stage, you can use a mixer. Gently add whipped whites to the yolk-cheese mass, kneading from the bottom up. Take care of the lightness of the cream, do not overdo it. Since you allowed yourself tiramisu (of course you remember the calorie content), then it should be ideal not only in taste, but also in texture.
Combine chilled coffee and alcohol in a separate bowl. Lubricate the bottom of the portioned molds with a small amount of cream. Soak Savoyardi sticks in coffee alternately, leaving them in the liquid for 2-3 minutes - they should be completely saturated, while maintaining their shape. Put cookies on top of the cream in tins as tightly as possible. Lubricate Savoyardi with half the cream. Repeat the procedure with the impregnation and laying out of cookies. Place the remaining cream on top and sprinkle plenty of cocoa. Refrigerate overnight.
Alternatives
Tiramisu has a very rich and delicate taste, but the monotony can be boring. Also, many will not dare to eat eggs without heat treatment. Pay attention to the following tips:
- coffee with alcohol can be safely replaced with fruit juices. Also, if desired, you can make lemon-strawberry tiramisu: add a little lemon kurd to the cream , soak the Savoyardi with a mixture of syrup and Limoncello liqueur and add a couple of layers of chopped fresh strawberries;
- if you want to get a portioned tiramisu cake, the calorie content of which per 100 grams will be similar, then add 5-7 grams of gelatin to the cream, previously diluted in 50 grams of cream;
- try replacing the eggs in the dessert with a mixture of whipped cream (250 grams) and egg yolks brewed with syrup (3 yolks + syrup from 90 grams of sugar and 40 grams of water). This is a safe tiramisu recipe, except that the total calorie content of the dish will increase by about 80 kcal due to cream.
Light Tiramisu Cake
The calorie content of this dessert is 160 kcal per 100 grams. Plus, due to the curd, the dish is rich in protein and calcium. This recipe makes a really delicious cake. Try it and you wonβt regret it!
Biscuit:
- eggs - 6 pieces;
- flour - 116 grams;
- sugar - 60 grams;
- stevioside - 5 grams;
- strong coffee - 30 ml;
- instant coffee - 10 grams.
Impregnation: strong coffee - 80 ml.
Cream:
- stevioside - 3 grams;
- vanilla extract - 1 tbsp. a spoon;
- soft fat-free cottage cheese - 400 grams;
- cream with a fat content of at least 33% - 250 grams;
- cocoa powder.
Cooking
Take a biscuit. Preheat the oven to 180 degrees, cover the baking sheets with baking paper.
Mix liquid and instant coffee. We do not recommend completely removing sugar - this tiramisu cake has a low calorie content, and sugar serves to further stabilize the eggs.
Separate the whites from the yolks. Beat the whites with a pinch of salt until a lush peak. Without stopping whipping, add sugar and stevioside. Add the yolks one at a time. The mass will be thick and shiny. Stir in coffee and sifted flour. Mix gently until smooth.
Form 3 circles with a diameter of 22 cm from a biscuit dough and bake until cooked. It takes about 15 minutes. Chill the cakes completely.
For cream, whip until a strong peak of cream, add stevioside. Stir in the cottage cheese and vanilla extract.
Now the assembly. Put the first biscuit into a mold with a diameter of 22 cm, soak coffee. Spread 1/3 cream on top of the biscuit. Press with a second biscuit, soak again. Add another 1/3 of the cream. Squeeze with the remaining biscuit, soak. Spread the remaining cream and sprinkle plenty of cocoa. Let it brew in the fridge overnight, and you can help yourself.
