Tiramisu dessert, its preparation is a real miracle from the world of cooking. Tiramisu is an Italian culinary discovery that has conquered millions of hearts of sweet lovers around the world. At the moment, the popularity of this multi-layer dessert breaks all possible boundaries, and besides, tiramisu is considered the most desired goodness in the whole world.

The recipe for a classic tiramisu cake is not that complicated: a little coffee, mascarpone (cheese), chicken eggs, savoyardi (air biscuits) and sugar. Usually, tiramisu is powdered on top with regular cocoa powder. Although the tiramisu fashion has introduced many new components to this traditional composition that replace the main ones. For example, grated chocolate is used instead of cocoa more often, biscuit is used instead of savoyard, and coffee impregnation is replaced with different fruit and alcohol fillings. So, to prepare tiramisu for a traditional Italian recipe, you need to take 4 eggs and separate the protein and yolk separately. Next is taken 35 gr. icing sugar and whipped along with the yolks. Mascarpone cheese (0.25 kg) gently intervenes in the resulting mixture and all this is mixed with light movements until an even, homogeneous mass is obtained.
Proteins also need to be whipped with half the icing sugar (35 gr.). After the formation of soft peaks on them, let the proteins cool to form solid peaks. Next, you need to add proteins to the previously obtained cheese-yolk mass.

While the resulting mass for tiramisu is resting, you need to brew and cool good coffee. And then add a little cognac to it (4 tbsp.spoons). Mix with the bulk. Next, you need to quickly dip the sticks of Savoyardi (1 package) in this mixture and spread on the mold. As a result, you will get a number of stacked cookies. Pour it over with cognac-coffee mixture and lay out the second layer of cookies in a similar way. After that, the remaining mixture must be poured onto it and carefully leveled. After that - whip the cream (10 ml.). This is necessary to decorate the dessert. To decorate, tiramisu is also sprinkled with grated chocolate or cocoa powder.

In the end, you need to give time to cool the dessert in the refrigerator.

If you wanted to make tiramisu, then most likely you won’t be able to make it according to the classic recipe, but all because finding savoyardi cookies is not so simple. To prepare a classic tiramisu cake recipe , mascarpone, savoyardi and light Marsala wine are used. Mascarpone is a fresh cheese with a fat content of 55%, which is produced only on the Apennines. This is the middle ground between butter and fat sour cream. The main difference between mascarpone cheese is that, unlike other types of cheese, it is obtained not from milk processing, but cream.

Italian Savoyardi air biscuits are made exclusively in the form of tubes and gives the dessert a special taste. Like Marsala wine, which is produced near Sicily, real savoyardi can only be found in Italy, so you can enjoy the traditional taste of tiramisu only by visiting this wonderful country.

But do not despair, because the biscuit for tiramisu can be made independently. To do this, take 4 chicken eggs (be sure to separate the proteins and yolks) and beat them with powdered sugar (0.75 cups). Then, premium flour (0.85 cups) and baking powder for dough (0.5 teaspoon) are added. The dough obtained in this way is cut into narrow strips and baked in the oven for 6-7 minutes. As you can see, the tiramisu cake recipe is not complicated.

Mascarpone is replaced with fat cottage cheese or cream, savoyardi with biscuit cakes, which can be prepared independently, and Amaretto liqueur or cognac is used instead of Marsala wine.
