Add soda to the flour and mix thoroughly. Add salt, sugar and sunflower oil to kefir. Add the flour to the kefir mass and, again, mix everything thoroughly. Gradually adding the remaining flour, knead a soft elastic dough. Do not make the dough too tight, otherwise the khachapuri will turn out not tasty. We cover the dough with a napkin and let it stand for a while, during which time we will have time to make the filling. We rub cheese and garlic on a coarse grater, add chopped greens, a raw egg to them, mix everything thoroughly.

From the dough we make a sausage and divide it into several parts. Soft dough can stick to your hands, so before chopping, roll the pieces in flour and form balls. Roll the ball into a small cake, in the middle of which we put the filling, pinch the edges inward and turn the resulting ball with the seam down. Then gently roll the ball into a thin cake. Thoroughly warm the pan with a thick bottom, spread the khachapuri and bake without adding oil until a golden crust is formed. You can cover the pan with a lid, then khachapuri is better baked.
