First of all, you need to lay out the dough for 30-50 minutes so that it defrosts. Your dough should be soft.

Ingredients for the dough:

  • 550 grams of flour;
  • fifty grams of starch;
  • 35 grams of butter;
  • 10 grams of dry yeast ;
  • 150 milliliters of water;
  • 50 milliliters of milk;
  • seven teaspoons of sugar;
  • 325 grams of butter (in order to lubricate the dough);
  • egg yolk (also for greasing dough).

Cooking method

First you need to sift the flour and mix it with a baking powder. Then add a little salt, sugar, yeast and mix well.

Then pour in a thin stream of milk, and also add butter (softened) and water. Knead the dough, then cover it with cling film and leave until it doubles.

After the dough has risen, you need to crush it and hide in the refrigerator for an hour and a half.

He takes out the dough from the refrigerator and put it on the table, sprinkled with flour.

In the mind, we divide the dough into three parts, two of them are greased with butter. Then we fold the dough in this way: first we bend the non-greased part of the dough, and then the greased one. You get a kind of book. Back we hide our dough in the refrigerator for an hour (so that the oil freezes).

We take out the dough from the refrigerator and do the previous operation again, and put the dough in the refrigerator for another half hour.

This procedure must be repeated three more times.

When the dough is ready, roll it into a thin layer, then cut out a circle from it and divide it into eight parts. We turn each part into a croissant shape.

We leave our croissants so that they come up, and then grease them with yolk and transfer to a baking sheet, previously greased with sunflower oil.

The oven should already be preheated to 220 degrees, but you need a croissant oven at a temperature of 190 degrees until a brown crust appears.
