Curdless cake without baking - a beautiful and light dessert, with a delicate taste. It somewhat resembles the taste of glazed curds, but not so sweet, since very little sugar is put in it. It is possible to list all the advantages of this curd dessert for a very long time. Among other things, it seems to be specially created for summer gatherings with friends and family holidays in the hot months. At this time, it is unlikely that you will want to bother with cooking the usual cake, because for this you will have to heat the oven, further raising the temperature in the house. A delicious and cool dessert at this time will come in handy.
The only drawback of this dessert is that after cooking it needs to stand in the refrigerator for at least 3 hours. So, it will not work to please the guests with a cottage cheese cake, but if the celebration is scheduled for tomorrow, then you simply cannot find the best dessert.
Almost any popular dish over time acquires a large number of cooking options, and cottage cheese cake without baking was no exception. However, not every option is worthy to speak about it separately. For the most part, we are talking about minor changes, such as, for example, replacing some berries or fruits with others.
Nevertheless, there are several really different options for one dish, which will be discussed in this article.
For starters, the easiest curd cake without baking. It contains only the very minimum of ingredients, namely 300 g of cottage cheese, 450 g of sour cream, 20 g of gelatin, 2 tablespoons of sugar or powdered sugar and ready-made biscuit cakes. It can be either purchased cake or self-baked in advance.
First you need to fill the gelatin with warm boiled water and leave for 40 minutes to infuse. During this time, you need to cook a curd-sour cream mixture. To make the finished cake tender and without lumps of cottage cheese, you must first wipe it through a sieve. Then sour cream and sugar are added to the pureed cottage cheese, mixed with a mixer into a homogeneous mass.
By this time, gelatin should already swell. Now it is put on low heat and constantly stirred until the gelatin is completely dissolved. Then it is poured into the bulk and mixed again. Most recipes use just such a cottage cheese and sour cream mass, only the basis for the cake and various flavorings are changed.
At the bottom of the mold, the finished biscuit cake is laid, sour cream-curd mixture is spread on top, leveled and cleaned for several hours in the refrigerator. Then it is pulled out and taken out of the mold. Then you can do decoration, but in fact, the curd cake without baking is ready.
This recipe can be significantly varied by simply adding pieces of fruit or berries to the curd mass. Cottage cheese cake with cherries is very popular, however, any filler can be chosen.
Based on the same recipe, you can cook blueberry curd cake without baking. The peculiarity of this cake in its appearance is that it is striped. Differences in the cooking process begin after the curd is ready. It must be divided in two, one part should be a quarter smaller than the other. In a smaller part add mashed blueberries. As a result, both parts should be the same.
Then the curd cream is spread into a mold on top of the finished cake, alternating different colors: several tablespoons of white, several tablespoons of blueberry. The result should be a few multi-colored circles. To make the cake look more attractive, from the center to the edge you need to draw a thin stick several times along the radii at equal distances from each other.
Shortcakes can also be used as a base. For example, one of the recipes suggests using a rectangular shape. A small amount of mass is laid down, a layer of whole cookies is laid on top, then again a curd mass, again a cookie and so on to the edge of the form. The last layer should be from cookies. This cake differs from other options in that after hardening it needs to be turned over.
It turns out such a nice little wood that can be painted with, for example, chocolate icing. And you can crumble shortbread cookies and mix with butter and freeze.
