Almond cake: a few recipes

Under the words "almond cake" people understand completely different desserts. For the French, these are colorful macaroons. For Italians, these are biscuits covered with glaze and almond petals. In Ukraine, this cake is also called "Cracow". And in Russia, the older generation probably remembers cookies that are crispy on the outside and slightly viscous inside, which was prepared according to GOST in the Soviet Union and sold everywhere. In this article, we will try to consider various recipes for almond cakes. Making them is not so difficult. The main thing is to have at your disposal a powerful blender or coffee grinder to make nuts into flour.

It is said that the French almond cake was named after the sisters who invented its recipe at the end of the eighteenth century. Squirrels from five eggs are well cooled. Mix almond flour (125 grams) with the same amount of icing sugar. In another bowl, beat the squirrels (at an average mixer speed for ten minutes). Pour one hundred twenty-five grams of granulated sugar into a saucepan, pour cold water (35 milliliters) and put on fire. Stirring constantly, boil the syrup. Let it boil and carefully pour into the squirrels. Pour sweetened almond flour. Knead the dough. It should be the consistency of sour cream. We divide it into parts, each give color with the help of dry food dyes. On a baking sheet covered with parchment, squeeze out two centimeters of dough with circles of diameters. The oven should already be preheated to 160 degrees. Bake for five minutes. Open the oven door and close again. This will leave unnecessary steam. We repeat this procedure after another five minutes. After a quarter of an hour of cooking, we take out the baking sheet. We glue the halves of macaroons using any filling: jam, melted chocolate, coffee mass.

Italian almond cake: recipe

Six eggs are divided into yolks and squirrels. The first grind with sugar (120 g) and a bag of vanilla. In another container, mix one hundred thirty grams of chopped almonds, 60 g of ordinary flour and a teaspoon of cookie powder. Beat whites in steep foam. We introduce bulk ingredients. Stir and add to the yolks. Mix gently. We heat the oven to 175 degrees. Grease a baking sheet with fat, spread the dough. We smooth the surface with a knife and bake for about forty minutes. Lettuce 80 grams of almonds in a dry frying pan. Push them in large pieces. In three tablespoons of Amaretto liquor and two orange juice, pour two hundred grams of powdered sugar. Cover the cooled cake with the resulting glaze. Cut it into cakes. Sprinkle them with nuts.

Who doesn’t remember this cake from our childhood? Make it super easy, you don’t even need to light the oven. And instead of almonds, you can use other, cheaper nuts. But they should first be calcined in a dry pan, so that they become more crumbly and tasty. Then we blend seventy grams into flour, leaving a few nuts for decoration. Prunes and pitted dates (one hundred grams) mine. If they are too dry, steam in boiling water. Cut into small pieces. Mix dried fruit with almond or nut flour. We form balls the size of a ping-pong ball. Wrap each nut / almond cake in coconut. Done! Really easy?

Spanish Almond Cake Recipe

Beat four eggs with one hundred and twenty grams of sugar until a lush white and resistant foam is formed. Add a pinch of lemon zest and cinnamon. Whip again. We will need two hundred and fifty grams of almond flour. If not, you can simply grind raw nuts in a coffee grinder. But in this case, they need to be mixed with a little sugar, so that fatty almonds do not stick to knives. In the egg mass, carefully introduce the nutmeal. Grease a baking sheet with fat. Sprinkle with a small amount of wheat flour. We spread the dough with a spoon. It should be noted that the almond cake will grow in volume. Therefore, blanks should be located away from each other. Sprinkle almond petals on top of the pastries. Bake for a quarter of an hour. Without waiting for cooling, shift to the dish.

The recipe was indeed invented in the Soviet Union as a socialist response to bourgeois macaroons. We make flour from one hundred and twenty grams of raw almonds. Add 230 g of granulated sugar. Mix. Now add two egg whites. Not whipped - this is important. We stir and only at this stage we work as a mixer. Add another protein. Whip again. We put the pan with the mass on a small fire and, constantly wielding a spoon, bring to body temperature. Constantly have to insert a finger, but what can you do. Remove the pan and put in a mass of thirty grams of wheat flour. The dough should turn out semi-liquid. We fill them with a cornet made from a clerical file with a cut corner. We cover the baking sheet with baking paper. Lubricate for fidelity with fat and sprinkle with flour. We squeeze out an almond cake from the cornet - one after another. We bake in an oven heated to one hundred ninety degrees for about fifteen minutes. Remove from paper after complete cooling.
