The dough preparation process consists of two stages: this is the preparation of the starter and dough. Sourdough is made from:
- wheat flour - 300 g;
- dry yeast - 2 g;
- water - 300 ml.
For the test take:
- wheat flour - 600 g;
- sugar or malt - 10 g;
- salt - about 20 g;
- dry yeast - 3 g;
- flour for sprinkling whole grain bread.
During the preparation of the starter, make sure that it looks like a liquid pancake batter. For Ciabatta, it is better to choose Italian-made flour. To prepare it, you need to dissolve the dry yeast in water (forty degrees), sift the flour, combine everything, add liquid to the mixture. Knead the dough with a wooden spoon to make it soft and uniform. Dishes with ready-made sourdough are covered with a film and left for three hours. After this time, it will darken and will contain air bubbles.
To prepare the test, you need to dissolve the dry yeast and sugar in warm water, leave to activate for fifteen minutes. Then add to the leaven and mix thoroughly with a wooden spoon. After adding salt and sifted flour. Once the dough has thickened, you need to knead it manually for twenty minutes until a homogeneous consistency.
The next step is to transfer the dough into a bowl, cover with a film and leave for an hour. The working surface should be sprinkled with flour, spread on top of the dough (should get a rectangular shape). Then divide it into ten equal parts of a cylindrical shape, cover with a film, allow to rise for an hour. Pieces of dough are stretched, placed on a baking sheet, which is pre-covered with baking paper. The temperature in the oven is 240-250 Β° C.
