Blackcurrant pie - summer pleasure

Blackcurrant pie is doubly tastier if you made it yourself. Fragrant pie can be prepared from fresh berries in season, use blackcurrant jam to make a pie, or take frozen berries. By the way, blackcurrant is considered the most valuable berry, as it contains a lot of vitamin C, antioxidants and polyphenols. Also, blackcurrant helps to increase immunity, strengthens eyesight, prevents the development of diabetes, leads to the healing of the body as a whole.

Pie with blackcurrant has been especially loved in our family for a long time, in addition, the cost of it is small, and it is not difficult to cook it. The recipe for blackcurrant pie is this: take four eggs, one packet of baking powder for dough, powdered sugar 2 cups, 400 grams of flour, vanillin, butter or margarine 250 grams, five tablespoons of milk, blackcurrant 250 grams (you can use frozen berries or use jam). For the preparation of glaze: vanillin on the tip of a knife, juice of one orange, one tablespoon of icing sugar.

A blackcurrant pie is also very tasty if you add ground nuts (half a glass) and the zest of one orange, but this is optional.

First you need to melt the butter (or margarine, if desired) over low heat, pour out the powdered sugar and mix well, until a thick mass forms. Add eggs, vanillin, baking powder, milk and stir well. Sift flour beforehand. Add finished flour to our billet. With stirring, the dough becomes thick and falls heavily from a spoon. Next, we add half the prepared berries to the dough. We grease the form in which you will bake the cake, pour the dough and pour the remaining half of the berries on top. Preheat the oven to 190 degrees, set the cake for 50-60 minutes. While the blackcurrant pie is coming up, we are preparing the icing. Mix orange juice with vanilla and icing sugar, mix well (you can use a blender), the mixture should turn out to be liquid and soft. After the cake is ready, pour the icing on top and enjoy the great taste of homemade cakes.

The cake of blackcurrant jam decorated with cream is very tasty. It is cooked quite quickly, has a delicious friable shortcrust pastry and tender blackcurrant filling. We use the following ingredients: one glass of flour, blackcurrant jam one glass, sugar 1.5 glasses, eggs three pieces, a teaspoon of soda, kefir one glass, zest of one lemon, sour cream one glass, walnuts one glass, vanillin. Next, take a bowl and break the chicken eggs into it, add half a glass of sugar to the eggs and beat with a whisk or electric mixer. Add jam, kefir to the bowl, soda at the end and mix everything thoroughly. Pour vanilla and flour into the dough, mix until a homogeneous, dense mass is formed. There should be no lumps in the test. Preheat the oven to 190 - 220 degrees.

The dough is laid out in a mold and baked in the oven for about forty minutes. You can determine the readiness of the test by the resulting golden crust. The finished cake needs to be removed and cooled. While the cake is getting cold, make a cream. Beat a glass of sugar and a glass of sour cream with a mixer, add chopped walnuts and zest, whisk everything again. Cut the cooled cake in half, divide into two cakes. Lubricate one cake with sour cream and nut cream, top with a second cake, which is also lubricated with cream. Blackcurrant jam pie is ready. According to this recipe, you can cook pies with various fruits and berries, invariably one thing - the cake turns out to be very tasty and aromatic.
