Salads with shrimp, lettuce and cucumber
For cooking you will need:
- about 1.5 kg of unpeeled shrimp;
- 3 fresh crisp cucumbers;
- red lettuce - half (if large) or a whole medium size;
- 5 quail eggs;
- 300 g (about 1 can) of black olives;
- juice of one lemon, a couple of tablespoons of olive oil;
- lettuce leaves;
- salt and to taste spices.
Boil the shrimp and then peel off the shells. Quail eggs also need to be boiled, and then cooled and finely chopped. Cut the onion into half rings, and the cucumbers with either strips or cubes - that is, as you like. And now a large salad dish, preferably flat, line with salad leaves, and on top put the prepared ingredients mixed with each other. At the very end of the salad you need to pour the dressing: for it, mix the squeezed clove of garlic, olive oil, fresh juice of one lemon and salt with spices (you can take white pepper). Done - before serving, you can decorate with crackers or nuts. By the way, if you like mayonnaise, then

Shrimp, Cucumber and Tomato Salad
To prepare, take:
- half a kilogram of any shrimp cooked and cleaned from shells - you can take large, royal, and smaller species;
- 3 pcs. fresh cucumbers and tomatoes;
- a small bunch of fresh chives;
- for dressing - natural vinegar, vegetable oil, a little sugar and salt.
Prepare the ingredients for the salad: crumble the cucumbers, tomatoes, and shrimps to your liking. But usually vegetables are cut into circles, and shrimp in half, if large. Chop the onion finely. Now mix the vegetables in a separate bowl, season with vegetable oil and vinegar, salt. On a large dish in the middle, lay the shrimp (without dressing), and on the sides - a
salad of vegetables. It will turn out delicious and beautiful, such a treat can be put on the festive table.
Fresh shrimp, cucumber and apple salad
For a beautiful, colorful dish you will need:
- 450 g of boiled shrimp;
- freshly squeezed juice from half a lemon;
- 2 handfuls of any salad greens;
- half a large fresh cucumber;
- 1 large green apple ;
- 5-6 radishes;
- for dressing, take half a glass of skimmed yogurt without additives, a teaspoon of fresh grated horseradish, a little spicy sauce like Tobasco, a little green onion and salt and pepper to taste.
Prepare the ingredients in the salad: shrimp, cucumber, apple and radish cut into small pieces, and chop the greens finely. If you use lettuce leaves, you can just tear them with your hands. Mix the ingredients, pour lemon juice. For dressing in a blender, beat natural yogurt, spicy sauce, horseradish and spices. After pour the resulting sauce on the salad and mix. You will be pleasantly surprised by the delicate taste of the dish.
