  • Beat two chicken eggs and 50 grams of powdered sugar into a lush mass.

  • Pour 100 grams of almond flour and 60 grams of powdered sugar into a deep bowl. Add 30 grams of plain wheat flour.
  • Mix the dry ingredients with a whisk and sift through a sieve if you find any lumps.
  • Beat 160 grams of protein with a mixer at low speed. Add 60 grams of powdered sugar in several doses. You need to finish mixing only when the meringue becomes stable and acquires brilliance.
  • Put whipped proteins on top of the dry mixture, and then gently mix the ingredients with a silicone spatula.

  • Add the remaining eggs to the bowl and stir the food for another eight minutes.
  • Separately, beat two protein and 20 grams of sugar to steady peaks.
  • In the almond dough, add two tablespoons of meringue and gently mix the products. When the mass becomes uniform, add another portion of the proteins, and so on until they run out.
  • Sift 20 grams of cocoa and 25 grams of flour through a sieve and combine in several stages with the dough.
  • Add 30 grams of butter melted and cooled to room temperature.

Cover the baking sheet with parchment, and then lay a thin layer of half the dough. Level the future cake with a spatula, put it in a preheated oven and bake until cooked. Cook the second half of the dough in the same way.
