Ingredients: half a glass of raspberries, 120 g of cottage cheese, 3 small wafers of the Artek type, 3 tablespoons of condensed milk, chocolate and mint leaves for decoration.

Equipment and utensils: sieve, grater or blender, transparent glasses.

  1. Mash the cottage cheese thoroughly with a fork or rub through a sieve. Add condensed milk and mix. The mixture should not be liquid.
  2. Grind the waffles with a coarse grater. You can use a blender, but make sure that it does not turn out too finely - you do not need to make flour from wafers.
  3. Pour the waffle chips into two glasses. Put raspberries on top so that the glasses are filled by about two-thirds.
  4. Dip your hands in boiled water, form small balls from the curd and put them on a raspberry layer.
  5. Garnish with melted chocolate and mint.

"Snowballs" with raspberry sauce

Ingredients: half a glass of raspberries, 1 egg, a third of a glass of milk, 10 tablespoons of sugar.

Equipment and utensils: stove, pan, mixer.

  1. Pick a few raspberries and set aside. Mash the rest, put in a small saucepan, add 8 tablespoons of sugar and put the mixture on fire. While stirring, bring to a boil, remove from the stove and let the raspberry sauce cool.
  2. Beat the protein until foam, gradually adding the remaining two tablespoons of sugar.
  3. Bring the milk to a boil and reduce the heat to low.
  4. Spoon the protein mass with a dessert spoon and put the resulting lump in boiling milk. Transfer the remaining protein mixture into milk in the same way.
  5. After the balls sank to the bottom, they need to be turned over and cooked for another couple of minutes.
  6. Arrange the prepared β€œsnowballs” on plates and pour with raspberry sauce, after adding the berries that were previously laid back to it.

Raspberries with chocolate and sour cream

Ingredients: 150 g raspberries, 100 g dark chocolate, a glass of 30-35% sour cream, 25 g butter, 1 tablespoon of icing sugar, mint leaves, nuts for decoration.

Equipment and utensils: stove, mixer, pan, transparent glasses.

  1. Grate raspberries with a spoon and put in a glass so as to fill it by a third.
  2. On top of raspberries, lay mint leaves.
  3. Beat sour cream with powdered sugar and fill the glass with this mixture to two-thirds.
  4. Transfer the remaining sour cream to the pan, put on the fire and bring to a boil. Add chocolate and stir until it dissolves. Remove the mass from the heat, introduce the butter, mix thoroughly, let cool. Then put the mixture in a glass, filling its last third.
  5. Garnish with mint leaves and nuts. Put in the refrigerator for half an hour.

Ingredients: 300 g raspberries, 100 ml cream, 4 tablespoons semolina, 200 g sugar, 5 tablespoons powdered sugar, 600 ml water.

Equipment and utensils: stove, mixer or blender, refrigerator, bowls, pan, sieve or gauze.

  1. Mash the raspberries with a fork, then strain with a sieve or gauze to get the juice. It should turn out about half a glass.
  2. Pour water into a pan, place mashed raspberries there. Put on fire, bring to a boil, and let it boil for 3-5 minutes.
  3. Strain the broth. Cake can be thrown out, and add sugar to the liquid, return to the fire and boil again.
  4. Add semolina and, while stirring, cook porridge for 15 minutes.
  5. Remove the porridge from the heat and wait for it to cool.
  6. Pour the raspberry juice into the semolina and beat everything with a mixer until the mass increases and acquires the consistency of jelly. Pour the resulting mixture into a bowl, but not to the brim, but leaving a little space for cream. Put in the refrigerator to freeze.
  7. Beat cream with powdered sugar before serving. Ideally, they should thicken.
  8. Spread the cream with sugar in a second layer on the cooled raspberry semolina porridge.
  9. Garnish the dessert with raspberries or coconut.

Raspberry Desserts with Cream

Dessert with raspberries and cream is another universal option. The easiest way to enjoy this combination: whip the cream with sugar, put fresh raspberries in a bowl and cover with whipped cream.

But you can cook something more complicated. For example, an Italian dessert semifredo.

Ingredients: 500 ml of 35% cream, 5 eggs, 200 grams of sugar, 11 grams of vanilla sugar, orange or lemon jam. Raspberries are best added to taste.

Equipment and utensils: stove, pan, mixer, baking dish (but we will not bake anything!).

  1. Combine the eggs, sugar and vanilla in the pan. Put the mixture in a water bath and beat for 5-8 minutes until the mass brightens and increases in volume. Then remove from the water bath.
  2. While the egg mixture cools, whip the cream until firm peaks.
  3. Combine the two masses and mix very carefully, but carefully.
  4. Add raspberries to the mixture: whole or pre-mash into mashed berries - if desired.
  5. Line the mold with cling film. Put a small amount of jam on the bottom and add some raspberries. Spread the raspberry-cream mass on top.
  6. Cover the mold with plastic wrap and refrigerate for several hours. Flip the dish onto a large plate before serving. Cut the semifredo into portions.

Raspberry Cake Without Baking

  4. Lay another layer of cookies and cover it with the remaining cream.
  5. Garnish the cake with raspberries, grated chocolate, nuts and mint leaves. It is advisable to let the cake brew for at least an hour so that it is saturated.
