Soak gelatin in warm water for 15 minutes. Knead the cottage cheese with a fork or pass through a sieve. Bring sugar and milk to a boil. Allow to cool slightly, then carefully inject whipped yolks so that they do not cook. Dissolve gelatin in warm milk, add all the cottage cheese and lemon juice (a couple of teaspoons), mix. A little later, the cream begins to harden. Next, whip the cream with a little sugar and combine with the cream. Get a lush curd mass.
While we were doing the cream, the dough should already be frozen. We get it, divide it into two equal parts and bake cakes. Cakes will turn out thin and fragile. We take the form with the sides, lay one cake on the bottom, spread the curd mass on top with a thick layer, cover with the second cake and put in the refrigerator for 4 hours. During this time, the cake with curd cream will harden. After it, you can decorate with any fruit, such as canned peaches or apricots. A bright cake is obtained from a combination of kiwi and strawberries. There are plenty of options, so experiment, the cake with curd cream will turn out delicious anyway.
Of course, I bake cakes not only for birthdays, but also on ordinary days. For example, on the first day of summer or on a day off. Fantasy plays especially well when berries and fruits ripen. It's time to bake a cottage cheese and yogurt cake.
For baking, we need 4 eggs, 200 ml of any yogurt, a pack of low-fat cottage cheese, a glass of sugar, a pinch of vanillin and 300 grams of premium flour. We mix all this, beat with a mixer and knead not very thick dough. We grease the baking dish with oil, pour half the dough and bake in the oven for half an hour. We do the same with the remaining test. In the meantime, while the cakes are baked, we will do the filling. We need a glass of milk, 100 grams of any cottage cheese, lemon juice or citric acid, 40 grams of sugar, a pack of gelatin. Soak gelatin in water. Bring milk and sugar to a boil, cool, add lemon juice, then pour in the gelatin. Mix and add cottage cheese. We clean in a cold place so that the cream freezes.
