The basis
To make it more convenient to consider, products based on a cake with a diameter of 20 cm will be taken below. To prepare a delicate and soft biscuit, you will need the following ingredients:
- 60 grams of apricot jam or jam;
- 25 grams of cocoa;
- 40 grams butter;
- 115 grams of flour;
- 150 grams of sugar;
- 6 pcs eggs.
First you need to separate the yolks from the proteins and beat them with sugar (75 grams) until a thick mass is formed. Do the same with proteins. Add a third of the resulting mixture to the yolks. To the egg mass with sugar you need to add cocoa and flour and mix everything thoroughly again. After that, add the remaining proteins and mix thoroughly, carefully making sure that the mass does not decrease.
Then it is necessary to melt the oil, cool it to 30 degrees and pour into the total mass along the edge of the bowl, gently mixing. Bake a biscuit at 180 degrees for 35 minutes. The finished baking should be left for several hours, so that it is completely cooled, and cut into cakes. Cream
Although the cream turns out to be bold, but without it the cake will not turn out the same as in Soviet times, the taste will be different. To prepare it, you will need several ingredients:
- 100 grams of cocoa;
- 120 grams of condensed milk;
- 200 grams of butter;
- 20 grams of water;
- 1 yolk.
To prepare the cream, you need to stir the yolk with water, otherwise when heated with condensed milk, it will curl. Then you need to mix it with condensed milk and put on medium heat. The mixture needs to be boiled down to the consistency of sour cream, after which it must be removed from the heat and cooled to room temperature. The next step is to whip the butter in the mixer until it becomes lush, add the condensed milk with yolk in parts. After all the previous steps, you need to add to the cocoa mass and beat well. Cream for chocolate cake according to GOST can be considered ready.
Cake assembly
In order for the cake to look exactly like it was in the USSR, you need to take into account all the nuances of the assembly. In the dessert there should be only three cake layers, which means that the finished biscuit needs to be cut. The cream itself must be divided into two parts and left a little so that it is enough to align the sides and the construction of the entire structure. Then you should put an empty cake on the very top. The top of the cake is smeared with a thin layer of apricot jam, you can use jam, and then pour with chocolate icing. To prepare it, you need only two ingredients - chocolate and butter.
To make the icing, you need to break the chocolate into small pieces and put the container with it in a water bath. When it is melted, oil should be added to it, cut into cubes and mix everything to a state of homogeneous mass. When the mixture is ready, it needs to be cooled.
Cake decoration
In order to give grace to the cake and decorate it, you can prepare patterns. To do this, you need melted chocolate and wax paper. Chocolate is subsequently applied to it, or it is poured in a thin stream in the form of any pattern.
