Remember the childhood tubes that were baked on a waffle iron and wrapped hot? They did not have time to cool down, as they were already absorbed with incredible speed, they were so delicious. Or puff tubes? In this article, you can find several recipes for making such a treat.
The easiest recipe for tubules that can be prepared on a waffle iron is
wafer rolls.
To prepare them, we need:
- butter or creamy margarine (150 g);
- sugar (150 g);
- eggs (4 pcs.);
- potato starch (50 g);
- wheat flour (150 g);
- milk / water (1/2 cup).
While we are preparing the dough, you can turn on the waffle iron, greased with vegetable oil, so that it warms up.
Beat soft butter (or margarine) with sugar, gradually adding egg yolks, introducing them into the mixture one at a time.
Gradually add starch, flour and at the end - milk (water).
Beat the chilled egg whites in a thick foam and gently introduce into the dough, thoroughly stirring in one direction. The resulting dough should acquire the consistency of fritters.
The tubes are baked immediately. In the middle of the already heated waffle iron (lower half), put a dessert spoon of dough and cover with the upper half of the waffle iron, not pressing very hard. Tubes are baked for about a minute, until golden brown, and then removed with a knife or spatula. Wrap the tubes still hot, and only after cooling can they be laid on a dish.
The tubule recipe is a base that can be stuffed with boiled condensed milk or butter cream, meringue or custard. Here itβs a matter of taste.
Another tube recipe, this time from puff pastry, which can be purchased at any supermarket.
Puff pastry
To prepare them, we need:
- puff yeast dough (500 g);
- foil.
Puff pastry must first be thawed at room temperature, after which it can be rolled out and cut into narrow strips two to three centimeters wide.
Whoever has cone molds on the farm will be a little easier for them. Those who do not have them will have to use the foil from which the pads - frames are made.
The cones prepared in this way are wrapped carefully with stripes of dough, winding them in a spiral.
On a baking sheet pre-greased and covered with parchment paper, put our forms wrapped with dough and bake for twenty minutes at a temperature of 200 degrees.
The foil is removed from the finished tubes only after they have completely cooled.
The resulting puff cones are just the base from which you can prepare puff pastries with cream. Moreover, the cream can be completely different for your taste. Try to prepare the filling in the following way.
Beat four egg whites in a water bath until soft peaks appear.
Gradually add sugar (about 1 cup) without ceasing to whisk until the peaks become more rigid.
Add a tablespoon of lemon juice to the mixture and continue whisking until smooth.
The resulting cream is left in the cold for two hours, after which they can fill the tubes.
Another simple tube recipe that you can easily and quickly cook.
Custard rolls with cream
To prepare the dough, we need:
- flour (180 g);
- water (180 g);
- butter (125 g);
- eggs (5 pcs.);
- salt (on the tip of a knife).
In the heating water, add butter and salt.
After the water boils, remove from heat and add the flour, stirring intensively.
When the resulting mass cools slightly (it will become approximately 70 degrees), rub eggs into it one at a time.
Pour the prepared custard dough into a pastry bag with a nozzle in the form of a smooth metal tube.
Squeeze on a pre-lightly greased baking sheet sticks, the length of which should not exceed 10-12 centimeters.
We bake in the oven for thirty minutes, at a temperature of 200 degrees (220).
After complete cooling, we chop the prepared custard tubes with a knife and fill them with cream using a confectionery syringe, which will require:
- sugar (300 g);
- milk (0.5 l);
- flour (80 g);
- vanilla sugar.
Heat the milk, to which we add sugar. Add vanilla sugar and flour to the boiling solution, stirring vigorously until a creamy mass is obtained. When the custard has cooled slightly, feel free to stuff the tubules.
