Charlotte is one of the most beloved and respected homemade cakes. It is prepared very easily. The dough does not require special attention. You don’t have to bother with stuffing either. And it eats on both cheeks! However, in most cases it is cooked exclusively with apples. Probably, solely by inertia - they say, it should be, so it should be. But charlotte with plums, for example, has a very sophisticated and unusual taste, and it is prepared just as easily. So let's experiment!
Exclusively plums
Let's start with the elementary. To begin with, let it be just charlotte with plums, without additional components. So, 4 eggs and a glass of sugar are taken. They are whipped into a dense, thick and white foam. Then a glass of flour is added to the dishes - and again thoroughly whipping. Some housewives prefer at this stage to use a spoon, which also needs to be rotated strictly in one direction. But perhaps this is just superstition. The whisk or mixer has not yet tarnished itself.
Somewhere a pound of dense sinks are washed and cut. Someone prefers to cut them in halves, someone - in quarters, but definitely not worth it. The dough is mixed with fruit and poured into a greased form. For those who are accustomed to making a pie exclusively with apples, but are ready for the idea of “charlotte with plums,” the recipe may recommend more fancy options. The same amount of flour mixed with a teaspoon of baking powder is gradually introduced into the mixture, constantly whipping. The recipe allows the combination of these fruits. For such a pie, beat 5 eggs with a glass of sugar. When you get lush, thick foam, vanilla is added (how much you like), baking powder (according to the instructions on it) and a glass of flour. As soon as the mass becomes homogeneous, it is ready for further actions with it. A third of the dough is poured into the greased form. 3 apples are laid out on top, peeled and cut into proportional slices. Another third is poured - and 8 plums are cut, cut into quarters. Finally, the rest of the dough is poured, and the cake is placed in the oven for half an hour (160-180 degrees, depending on the characteristics of the oven). And plums and peaches
Interestingly, plum charlotte can be supplemented with so many fruits. The same peaches will refresh the taste of apple, plum, and apple-plum pie. The dough is prepared as usual: eggs, sugar, flour. There is a lot of debate in what ratio they should be. If you do not have your own opinion, stick to the tradition: 3 eggs, a glass of sugar and the same amount of flour. More, less - these are extremes, and the “golden mean” usually saves. The number of plums and peaches is also a matter of taste. Love fruit - put more, love sponge cake - reduce fruit filling. On average, it is enough to take two fruits. The remaining actions are predictable: half of the dough is poured into the form, pieces of fruit are poured into it, which are poured with the test residue.
