So, I want to bring to your attention one quite interesting option for cooking zucchini. This is a salad of zucchini whose recipe is very simple, but the taste is very interesting.
You'll need:
Zucchini, boiled eggs, carrots, onions, mayonnaise and salt.
Cooking:
We start, of course, with zucchini. We rub it on a grater (medium size), previously the zucchini should be washed and peeled. Next, grate the carrots on the same grater, so much so that the amount is not more than half of the zucchini. In the event that the vegetables gave a lot of juice, just drain it. It is advisable that the vegetables are dry. Chop onions finely (take the amount to taste, but not too much). A boiled egg is also chopped smaller. Mix everything, grease with mayonnaise and salt to taste.

As already mentioned at the beginning of the article, zucchini salad recipe is not the only one and I would like to recommend you a couple more ways to prepare this vegetable. For example, you can put it out and make a delicious vegetable stew, or just fry it.
If you decide to cook fried zucchini, then try to clean the zucchini, cut into circles (that recipe is suitable only for young zucchini, pitted). Dip each circle into a beaten egg and fry in vegetable oil. Then grease each piece with mayonnaise and garlic. This is a simplified cooking option, so to speak, the basis, and then it all depends on your imagination. Based on this recipe, I can suggest a recipe for zucchini with tomatoes.
For this, in addition to the used products, you will also need tomatoes, herbs and lettuce. Fry the zucchini, as described above. Next, lay out on a serving shallow plates one large sheet of salad. On a salad, with a turret (one on top of the other) we put the fried zucchini, each greased with mayonnaise and garlic. The quantity depends on your preference. In the end, put the tomato on top of the turret (cut it into large circles and cover the tower, as it were). All other jewelry is just your imagination. Sprigs of greens, olives, olives, slices of cheese ... In general, everything that you like or consider necessary to add. It turns out very tasty!
And here is another interesting recipe for zucchini with cheese. This dish is cooked in the oven, at a temperature of 200 degrees. To prepare such zucchini you will need:
700g squash, 1 clove of garlic, 1 fennel, 1 tbsp. herbs of sage, half a glass of cream, 400g canned tomato, half a glass of flour, pepper and salt to taste, 2 tbsp. nuts, 2 tablespoons butter and 1 tablespoon grated cheese.
Cooking:
Put sliced โโzucchini into a baking dish. Fennel, chopped into thin rings, spread in a second layer, then put the garlic and sage (finely chopped). Mix tomatoes with cream and pour vegetables over this mixture. Pepper, salt.
In a separate bowl, chop the butter and mix with flour, then add nuts and cheese and grind everything together. Pour the zucchini with the prepared mixture, cover the mold tightly with foil and put in the oven to bake. Cooking time 40 minutes, after the specified time has passed, you must remove the foil and bake for another 20 minutes. It turns out a delicious casserole.
