Fresh Cabbage Salad with Apple and Carrots
For a large serving, take:
- a pound of white cabbage;
- 2 pcs. carrots and apples, it is best to choose acidic varieties;
- 2 tbsp. l raisins;
- a pair of green onion feathers;
- spices, lemon juice and dressing oil.
Wash the raisins and soak in hot water for a quarter of an hour, finely chop the cabbage with a knife, salt and slightly knead with your hands - so it will become even juicier. Peel the carrots and apples and grate on a coarse grater. Chop the onion finely. Mix all the ingredients in a large salad bowl, add raisins (previously draining water from it) and green onions. Dress a fresh cabbage salad with an apple with a mixture of salt, optional spices (you can take, for example, dry dill or any other herbs) and vegetable oil. Shuffle. It will also be delicious if you use low-fat kefir with spices (you do not need to add oil in this case) or liquid sour cream or natural yogurt without additives as a dressing.
Fresh cabbage diet salad with apple and celery
For a low-calorie dish, you will need:
- 1 small forks of cabbage (approx. 1 kg);
- 2-3 green apples ;
- 200 g celery root;
- dill, a little sugar and vegetable oil.
Finely chop the cabbage, salt and mash, peel the apples and celery and grate. Mix all the ingredients in a salad bowl, sprinkle with sugar (about 1 tsp), dill and season with vegetable or olive oil. To taste, you can add lemon juice and a couple of drops of balsamic vinegar. The calorie content of this salad is extremely small - only 82 kcal per 100 g, and most of them are contained in oil. That is, to reduce the energy value of each serving, you can just season the salad with a mixture of vinegar and lemon juice, it will be just as tasty, and the fat content will be reduced to zero.
Quick Fresh Cabbage Salad with Corn and Apple
For it, you will need the simplest products and only 15 minutes of your time. Take:
- a quarter of a head of cabbage;
- half a jar of canned corn;
- 1 pc. carrots and apples;
- onion;
- mayonnaise and salt.
Finely chop the cabbage, carrot and apple without peel and seeds, grate. Cut onions into rings and pour over boiling water - this will leave bitterness, and the vegetable will remain just as crispy. Drain the water from the corn. Mix the ingredients, season with mayonnaise, salt and serve.
