Salads for the winter - this is primarily a storehouse of vitamins. In addition, they successfully complement any dish and diversify your menu. Usually they are prepared from vegetables: tomatoes, cabbage, beets, cucumbers, eggplant, peppers.
Harvesting salads for the winter usually takes quite a long time. That is why not every housewife boasts canned pickles on the table. But how nice it is to open a jar of delicious preservation in winter!

To prepare it, you will need:
- Tomatoes 3 kg.
- A kilogram of onions
- Bulgarian pepper 1 kg.
- Salt
- Vegetable oil 1 cup
- Ground pepper
- Garlic 300g.
- Hot pepper pod
- Dill and parsley
Cooking Salad.
We ignite the oil on a fire, put finely chopped onion into it and fry it until a golden hue is formed. Cut the tomatoes into small pieces, add them to the onion and simmer for about 45 minutes. Sliced โโbell pepper, put it in the vegetables and leave to stew for 15 minutes. After pouring ground pepper, chopped herbs, hot pepper and simmer for another five minutes. At the end, add crushed garlic and boil the mass for several minutes. Then put salt and pour hot salad into sterilized jars. Roll up.
Very tasty and tender salads for the winter are obtained from eggplant. Here is a recipe for one of them.

Required Products:
- Sweet red pepper 2 pcs.
- Two apples
- Garlic 2 heads
- 2 carrots
- 2 onions
- 5 kg Eggplant
Sauce.
- Vegetable oil 500g.
- Tomato juice 2 liters
- 9% vinegar (glass)
- Salt 100-130g.
- 250g vegetable oil
Cooking.
Mix the above products for sauce in a deep saucepan. Put finely chopped onion and garlic, pepper, apples, and grated carrots there. While stirring, bring the vegetables to a boil. Cut the eggplant into medium-sized cubes and add to the salad. Boil all the ingredients for another 40-45 minutes. Gently distribute the prepared food on previously sterilized jars. Roll up.
Very bright and beautiful salads for the winter are obtained from colorful peppers.

To make a salad, take:
- Small in size cucumbers 2 kg.
- Tomatoes 2 kg.
- Kilogram of zucchini
- Bulgarian pepper (different colors) 1 kg.
- Squash 1 kg.
- Peas, bay leaf, dill, celery and parsley.
Marinade:
- Citric acid 4 table. spoons
- 1.3 liters of water
Cooking.
Wash the cans well for preservation, put greens, 3 bay leaves, 4 peas of pepper on the bottom of each. After that, wash the vegetables, cut them into small slices and lay on top of each other as follows: cucumbers, squash, then pepper, zucchini, and last but not least tomatoes. Place chopped greens between the vegetables.
Boil the ingredients for the preparation of the marinade in a separate container, cool slightly and pour them allsorts. Sterilize three-liter jars with salad for about 25 minutes, then wait until they cool slightly and roll up.
Very nutritious and mouth-watering salads for the winter can be prepared from beans.
"Rainbow"
To make a salad you will need:
- Small tomatoes (green and pink)
- Small cucumbers
- Cauliflower
- Chives
- Green beans
- Garlic
- Multi-colored pepper
- Carrot
Vegetables are taken in equal proportions, about a kilogram.
Marinade:
- Litere of water
- One and a half tablespoons of salt
- 6 peppercorns
- One and a half cups of sugar
- Cloves (16 buds)
- 7 tablespoons of vinegar
Cooking.
Peel the carrots and cut them into thin circles. If the cucumbers are quite small, you can put them whole, if large - cut into circles. Slice the beans (3 centimeters long). Onions and tomatoes are put whole. Wash cauliflower and disassemble for inflorescences. Mix all prepared vegetables and gently lay in jars.
Separately, boil the marinade from the indicated ingredients and fill it with salad, without adding 2 centimeters to the neck. Sterilize the jars of salad in a pan of hot water for about 20 minutes, and then roll them up.
