Flour composition

Pancake flour "Sokolnicheskaya" in its composition, in addition to premium wheat flour, contains skimmed milk powder, powdered sugar, a baking powder - sodium bicarbonate, sodium chloride, edible egg powder and an acidity regulator - citric acid. In fact, this is a full-fledged blank for the preparation of pancakes, which can only be diluted with water in the right proportion.
Sokolnicheskaya flour is primarily a premium product, which means that according to GOST it should contain no more than 0.55% of the mass fraction of dry ash and at least 28% of the mass fraction of raw gluten. Moisture may be present in the flour. Its percentage of mass fraction should not exceed 15, otherwise the flour will quickly deteriorate. In addition, products can be enriched, within the established norm, with mineral substances, vitamins and baking improvers, for example, dry gluten. Sokolnicheskaya wheat flour is sold in paper packaging with a packing of 2 kg and 1 kg. Also on the shelves you can see this flour in cylindrical jars weighing 800 g with an adjacent plastic lid.
