Each hostess keeps in her piggy bank a lot of proven recipes. They help to quickly and tasty feed the household, stock up with delicious salads for the winter. However, some mothers are concerned that babies are completely unwilling to eat vegetables. What to do? In this case, the child’s diet remains inadequate. Vitaminka salad comes to the rescue. By the way, to cook it with children is informative and interesting!
Vitaminka salad for kids
To prepare such a simple, but very healthy and tasty dish, you will need:
- fresh carrots - 2 pcs.;
- large apples - 2 pcs.;
- walnuts - 75 grams;
- honey - 1 tsp;
- rast. oil (preferably olive) - 1 tbsp. l .;
- lime or lemon juice - 1 tsp.
- greens - 1 branch for decoration.
First of all, you need to refuel. To do this, put honey, oil and lime juice in a small bowl, mix thoroughly. The proportions in the recipe are approximate, try dressing. If it seems too acidic to you - add honey, and if sweet, pour a few more drops of lemon juice.
Now let's take care of the main components. Wash the apples, cut into several pieces and remove the core. You can rub them on a coarse grater or cut into neat thin strips, at your discretion. My carrots are also cleaned and finely chopped.
We mix the ingredients and immediately pour the dressing. This must be done quickly, otherwise the apples will darken. Now you need to peel the nuts and roast them for 3-4 minutes in a dry pan. Peel the kernels from the top peel (otherwise the salad will be bitter), put in a plastic bag and detail with a rolling pin. Crushed nuts can be mixed with carrots and apples, and can be used to decorate a dish.
Let the salad stand for a few minutes and serve. Even the most capricious children are happy to eat this delicious, juicy and sweet salad. And to make it even more useful, you can add 5-6 pieces of steamed and finely chopped dried apricots.
Tasty salad for adults
This version of Vitaminka salad is unlikely to appeal to young children, but many adults will like it. To prepare it, you will need:
- sweet pepper - 1 pc.;
- carrots - 1 pc.;
- apple (large) - 1 pc.;
- lemon - 1/2 pcs.;
- canned corn - 2 tbsp. l .;
- parsley - 3 branches;
- dill - 3 branches;
- Romano salad - 1 head of cabbage;
- unsweetened yogurt - 0.5 cups;
- spices to taste.
Chop pepper into thin strips, grate carrots. Peel the apple from the skin and seeds, cut into cubes. Squeeze juice from half a lemon and pour apple slices on it, mix. Place all components in a large salad bowl. Romano salad to tear with your hands and add to the same. If you don’t have exactly this kind of salad, you can use any other. Now add the corn and mix well.
Finely chop the branches of parsley and dill, add to the salad. Dress everything with unsweetened yogurt, add pepper and salt to taste, mix.
Delicious fish salad
It can be an excellent side dish for fish or meat, and can be served as a separate dish. Especially such a salad will appeal to those who want to lose weight, but at the same time eat is not only healthy, but also varied. You will need:
- carrots (large) - 1 pc.;
- turnip - 2 pcs.;
- white onion salad - 1 pc.;
- greens (any to taste) - 1/2 bunch;
- olive oil (sesame, garlic or others) - 2 tbsp. l .;
- lemon juice - 1 tbsp. l .;
- pepper, salt to taste.
To make such a salad is very simple. Turnips and carrots must be peeled, washed and grated on a medium grater or chopped very finely. Peel, wash and chop the onion into thin half rings. If you do not have a salad vegetable, you can use ordinary onion. To get rid of excess bitterness, the chopped onion must be poured with boiling water for 2-3 minutes, and then doused with ice water.
Make a dressing of oil, lemon juice, pepper and salt, add finely chopped greens, mix.
Vitaminka salad for the winter
The recipe for the next salad is also very simple. Using it, you can make a very tasty and healthy workpiece that will diversify the menu in the winter. To prepare a salad, you need to prepare:
- zucchini - 0.5 kg;
- onions - 3 onions (large);
- apple cider vinegar - 250 ml;
- sugar (brown is better) - 70 grams;
- mustard powder - 1/2 tsp;
- salt - 40 grams;
- turmeric - 1/2 tsp;
- fennel (dry) - 1/3 tsp;
- hot chili pepper (optional) - 1 pinch.
Cooking
To prepare Vitaminka salad from zucchini and onions for the winter, proceed as follows:
- Peel the onion from the husk, cut the stalks of the zucchini.
- Wash vegetables thoroughly and cut into very thin slices. You can use a special shredder for this.
- Pour vegetables in clean cool water and leave for 1 hour.
- Drain the water and pat dry the onions with zucchini with paper towels.
Separately, in a saucepan we prepare marinade filling. To do this, mix all the dry ingredients: salt, pepper, fennel, mustard, granulated sugar, turmeric. Pour the mixture with vinegar and over low heat bring to a boil, cook until sugar is completely dissolved.
Vegetables should be placed in a deep bowl or plate, pour boiling marinade and mix. Quickly, until the salad has cooled, put the salad in prepared clean, sterilized jars and cork.
Another winter option
And here is another wonderful preparation for the winter - Vitaminka salad from cabbage. It is interesting in that it does not even have to roll up. It is enough to put the cans in a cold place. For residents of urban apartments, a refrigerator is quite suitable, in a private house it is better to use the cellar. So, for the preparation of Vitaminka cabbage salad you will need:
- cabbage - 2 kg;
- onion - 2 kg;
- carrots - 2 kg;
- Bulgarian pepper - 3 pcs.;
- greens - 250 gr.;
- vinegar (9%) - 50 ml;
- water - 150 ml;
- sugar - 100 grams;
- salt - 2 tbsp. l .;
- vegetable oil - 210 ml.
Remove the top damaged leaves from the cabbage and finely chop it. The taste of the salad will depend on the quality of the slicing of the main ingredient. Peel and grate the carrots. To make the salad beautiful, you can use a special Korean carrot grater. We cut onions into thin rings or half rings, pepper into neat straws (the thinner the better).
Cooking brine. To do this, mix vinegar, water, oil, salt and sugar and bring the mixture to a boil. We mix the vegetables, fill with brine and put under the press for 2-3 hours. Now you can put the salad in banks or just leave it in a large saucepan. Store in a cool place. Over time, the taste of this salad does not deteriorate, but only gets better.
Tips & Tricks
In order for your salad to retain as many nutrients as possible, it is worth observing some rules:
- Lettuce leaves (any) is better to tear with your hands, and not cut with a knife. So much more vitamins are stored in them.
- The finer vegetables are chopped, especially cabbage, the tastier, juicier and more tender the dish will turn out.
- To prevent carrots from staining the salad in orange, pour a small amount of oil and mix, and only then add to the salad. Vegetable fat will “bind” the pigment, and the salad will look beautiful.
