  • Garlic is squeezed into a small amount of oil and infused for 10-15 minutes.

  • Chicken fillet is cut and laid out on a heated frying pan with olive oil. Fried until fully cooked. To prevent the chicken from being too dry, after the appearance of a fried crust, add a little water and simmer.

  • The mustard is ground with boiled egg yolks, after which lemon juice, vinegar, oil with garlic, salt and pepper are added to the resulting mixture.

Back in 1960, it was created by French chef Lucien Olivier, who works in a Moscow restaurant. The original salad recipe is still unknown to anyone, as the culinary specialist kept it in the strictest confidence. Presumably capers, caviar and other expensive products were included. Ordinary housewives modified it beyond recognition, replacing the components with cheaper ones, and since then the Olivier varieties have been the most popular salads in our country.
