Fresh cabbage salad - simple and delicious!

Cabbage is a wonderful vegetable, with which many myths and legends are associated. The most common ones are that children are found in cabbage, and also that breasts grow from cabbage. Simple Coleslaw

To prepare this light and very tasty dish you need to prepare:

  • young (if possible) cabbage - 0.3 kg;
  • sweet and sour apple - 1 piece;
  • medium-sized carrots - 1 piece;
  • greens (onion, parsley, dill suitable) - a bunch;
  • vegetable oil for dressing - 3-4 tablespoons;
  • lemon juice - enough 1 tablespoon;
  • sugar - an incomplete spoon (tea);
  • salt, pepper (it is better to use a mixture) - to taste.

At the first stage, it is necessary to chop cabbage, and grate the apple (without peel) and carrots. Cauliflower should be thoroughly kneading hands, slightly salted while - so it will become softer and let the juice. Next, finely chop the greens and mix all the components of the salad in a deep bowl. At the last stage, dressing is prepared, for which salt, oil, sugar, pepper and lemon juice are mixed. The resulting dressing should be watered with our fresh cabbage salad. This dish can be served at the very beginning of the meal as a light meal, as well as a side dish for meat and fish.

Original fresh cabbage salad with peanuts

  • white cabbage - 0.3 kg;
  • red cabbage - 0.3 kg;
  • salted peanuts - 50 g (the easiest way is to take ready-made nuts from sachets);
  • sour cream - four large spoons (tablespoons);
  • mayonnaise - a tablespoon;
  • mustard - a teaspoon without a slide;
  • orange juice (preferably freshly squeezed) - one spoon (tablespoon);
  • lemon juice - a teaspoon;
  • egg;
  • pepper, salt, seasonings (coriander, caraway seeds) - to taste.

When preparing a dish such as the original fresh cabbage salad with peanuts, you need to start with the main vegetable. White cabbage should be chopped, and red cabbage before this must also be taken apart into leaves and doused with boiling water to make it softer. Then the cabbage should be sprinkled with salt and seasonings and knead thoroughly with your hands. An important nuance is that you need to do this in two bowls, each view separately. After that, you need to prepare the dressing: thoroughly beat the sour cream, add mustard (if you do not like it, you can do without it) and an egg. Beat and combine again with mayonnaise, lemon and orange juice and salted nuts (they must first be ground or finely chopped with a knife), and, of course, salt and pepper.

At the last stage, chopped cabbage must be mixed with dressing and put on a dish. You can combine the two types together, but then this salad of fresh cabbage will lose its zest. It is better to fantasize and lay white and red cabbage in layers or just two hemispheres. Top can be sprinkled with salted nuts or herbs.
