Almost every celebration of a vibrant wedding is complete without large and beautiful wedding cakes. Cakes decorated with cream roses, berries and lace can be said to be one of the most important components of this holiday. But how can I make a cake with lace at home? Very simple! You just need to "buy" in the nearest store and start cooking.
How to make lace at home?
Usually, lace for a cake is made of elastic icing. There are several ways to make delicate beauty for a pastry masterpiece.
And the first recipe is just called "Lace for Cakes" from elastic aising. Similar recipes fall into the categories: "decoration of dishes", "other decorations." Making a cake with lace at home is very simple, especially after reading our recipes, tips and tricks.
Ingredients for lace
- Potato starch (it is recommended for the reason that it is the best choice, but you can also use a rice analog) - 20 grams.
- Fructose (can be replaced with sugar, as will be the case in this recipe) - 20 grams.
- Pectin - 1 teaspoon.
- Molasses - 1 teaspoon.
- Proviant dye (one that you like).
- Water - 40 grams.
A simple recipe for creating delicious and delicate lace from elastic ice
First of all, you need to take all the dry ingredients, pour them into a small bowl and mix well with each other (granulated sugar or fructose, pectin and starch). In the event that your paint for food is a dry base, then we add it to the bowl.
After all the ingredients have been well mixed, it is worth pouring some water and mix thoroughly again.
In the event that you have a gel or watery pigment (food coloring), then add it after mixing the dry ingredients with water. Stir the mass thoroughly with a spoon until smooth. In our case, white dye will be added, since it is white lace that we need to create a cake with lace.
After obtaining a homogeneous mass, the cup must be covered with a bag or gauze so that the workpiece is not weathered. In this form, leave it for 20-30 minutes so that the grains of pectin dissolve well.
After twenty minutes, remove the bag or cheesecloth from the cup. Stir the mass again. Add molasses and alcohol one teaspoon and mix thoroughly.
So we got the mass we needed, with which it will be possible to make a wedding cake decoration with lace.
Now we distribute the mass over a piece of lace fabric. We remove surpluses from all sides, especially from above. We send it to the oven and leave the door open until our lace is completely dry. The oven temperature should not exceed 70 degrees Celsius.
Lace done! In order to make it easier to separate it from the lace fabric, we recommend turning the fabric over and putting it on the table, and then carefully separating the base from the baked lace with gentle pulling movements.
The second way to make lace for the cake
Usually, cakes for the holidays are decorated with cream, nuts or grated chocolate. However, truly sophisticated chefs go further and try to bring to perfection not only the taste, but also the appearance of their pastries. One of the most charming ways is to create lace for your cake with your own hands. Each bread product can be transformed into an incredible and luxurious creation!
But creating lace for cakes at home is not an easy task. However, those who have mastered the skill of creating lace, assure that this is a fairly simple process than it might seem at first.
Ingredients for the preparation of a special mixture
The easiest way to make a cake with lace is to buy a ready-made Marletti or SugarVell composition to create a mixture. However, their cost is quite high. These blends can be easily used by beginners in lace making. But experienced chefs know how to cook the necessary mixture on their own.
The first step is to make a “special batch”.
It consists of the following ingredients:
- 35 g xanthan gum (you can buy in a store that specializes in soap products);
- 30 g of starch (corn is best)
- 104 g of matodextrin (the ingredient is used in the food industry, you can buy it in one of the specialized stores that sell molecular cuisine or sports nutrition products).
After all components are assembled, they must be thoroughly mixed. The powder will be quite a lot, about 100+ servings. The mixture is very well stored in any dry conditions.
Ingredients for Making Flexible Lace for Cake
Now you are completely ready to begin the creative process. To get lace on the cake, for this you need to mix:
- 1.5 g of our mixture, which was made before (maltodextrin, xanthan gum and starch);
- 33 g of egg white (make sure that the yolk does not get into the mass, otherwise everything will be spoiled!);
- 2 g of glucose (enough coffee spoon without a slide);
- 42 g of sugar (granulated sugar can be used, but sifted icing sugar is the best option).
Mix well and leave the mass to infuse for ten to fifteen minutes. After that, it must be heated in a water bath to the extent that all dry ingredients are dissolved. The mass can be brought to a complete homogeneous state by beating for about two to three minutes.
