According to one version (it is the most common), sushi was first prepared in Southeast Asia. Then the delicacy came to China and only then came to Japan. The legend tells that Emperor Keiko XII, who ruled in the XIII century, tried somehow a new dish. The taste of food was admired by Keiko. The dish was a raw sea shellfish flavored with vinegar. Unlike sushi, rolls were first prepared not in Japan, but in American Los Angeles. Here, classic sushi was modified to the preferences of the Americans. Ichiro Masita, a Japanese chef working in a Los Angeles restaurant in 1973, first made this dish. From here came the names of sushi and rolls "California" and "Philadelphia." These names are still called rolls.
