Where did the name come from?

Tiramisu was born in Italy, like pizza and spaghetti. There are many legends about its origin. Rumor has it that the first time it was cooked in the Tuscan region, in the city of Siena, at the end of the seventeenth century. The best pastry chefs of Siena have prepared a classic Tiramisu cake in honor of the Duke, who loved sweets very much. Then they called him "ducal soup."

Later this recipe came to Florence, and from there - to Venice, where it became popular among courtesans. They say that it was the courtesans who called him "Tiramisu" because of its exciting properties.

Another legend says that this dessert was invented in one of the restaurants in Treviso in the 60s and 70s. And the Italian who invented it now lives in the USA and is a supplier of desserts.

The most unromantic version tells us that Italians have come up with this dessert for a long time, dipping dry cookies in hot coffee with liquor.

Where to eat the most delicious Tiramisu?

Now in the menu of any restaurant or coffee shop you can see Tiramisu. But rarely where you can try tiramisu according to the classic recipe. The real Tiramisu is made from fresh mascarpone, cheese made from fresh fatty cream, which makes it so tasty and satisfying.

It follows that all the ingredients that make up Tiramisu can only be bought in Italy. Having ordered cheese there, you cannot be sure that it will arrive unspoiled.

Classic recipe

Essential Ingredients:

  1. 250 grams of mascarpone.
  2. 75 grams of sugar.
  3. 3 yolks.
  4. 120 grams of biscuit cookies.
  5. 2-3 teaspoons of instant coffee.
  6. 3-4 tablespoons of brandy.
  7. A tablespoon of cocoa.

Cooking coffee: instant coffee (2-3 teaspoons) for two hundred milliliters of boiling water). Cool, pour into a deep bowl, add brandy or Amaretto liquor. Beat the granulated sugar well with the yolks until the sugar has dissolved. Introduce the mascarpone into this mass and stir until a uniform, dense mass is obtained.

Dip half the cookies in the cooled coffee and put it in one layer in the mold tightly to each other. Spread 1/2 of the cheese cream on them and smooth them evenly. Now dip the remaining cookies in the coffee and put it tightly on top of each other on the cream. Sprinkle some coffee. Distribute and smooth the remaining cream. Cover it with cling film and put it in the refrigerator for at least four hours. Sprinkle with a little cocoa or finely grated chocolate before serving.

Homemade Tiramisu

Essential Ingredients:

  1. Mascarpone - 250 grams.
  2. Savoyardi cookies - about twenty pieces.
  3. Espresso - 250 milliliters.
  4. Fat cream - 250 milliliters.
  5. Amaretto liquor - five tablespoons.
  6. Granulated sugar - three tablespoons.
  7. Eggs are two.
  8. Cocoa powder - a teaspoon for sprinkling.

Pour four tablespoons of Amaretto into a bowl. In another bowl, beat half the amount of sugar with the yolks until a light, homogeneous mass is obtained. Add the same mascarpone and whisk. Take the third bowl and whip the cream there, add the cheese cream and mix everything carefully.

With the half of the sugar that remains, beat the proteins at room temperature to a thick foam. Mix the whites with the cheese cream, add the amaretto and mix.

Put savoyards on a dish with high edges, moisten it a little with mixed liquor and espresso in order to wet it. On top, lay and smooth the cream layer. Repeat this procedure: first the cookies, then the cream. Cover the finished tiramisu with cling film and put in the refrigerator for at least two hours. Cooled "Tiramisu" cut into pieces and put on a plate. Sprinkle with cocoa powder.

It can be done a little differently: serve in batches. Take a bowl, put a couple of cookies, and cream on top. Such a dessert can be stored in the refrigerator for a day.

Simplified Tiramisu recipe

Essential Ingredients:

  1. 1.4 liters of fresh coffee.
  2. 750 grams of mascarpone or fat cottage cheese.
  3. 6 tablespoons of rum.
  4. 6 pieces of eggs.
  5. 3 tablespoons of cocoa powder.
  6. 6 tablespoons of sugar.
  7. 3 ready-made biscuit cakes.

Separate the whites from the yolks. Whisk the yolks until sugary foam. Stir continuously, add cheese (if cottage cheese, until grind through a sieve) and rum. Beat the whites in a good foam and add them to the mixture, mix gently. Dip the biscuit quickly in cool coffee, remove and place on a wire rack to allow excess liquid to glass.

Sponge cake lay on the bottom of a round shape, spread part of the cream on it, cover with a second cake on top and put the cream back on. Ready β€œTiramisu” cover with a film to avoid crusting, refrigerate for at least four hours, sprinkle with cocoa before serving.

The recipe for this cookie has remained unchanged for five centuries, and cooking it yourself is not at all difficult. Its recipe does not involve the addition of baking powder or soda, but the dough is light and airy. What's the secret? And the secret lies in the separate and thorough whipping of yolks and proteins. To get a crisp, before sending to the oven to bake, sprinkle them with powdered sugar.

How to make a mascarpone on your own?

To make mascarpone, you need sour cream with a fat content of at least 20% in the amount of one and a half kilograms. Of this amount, one kilogram of one hundred grams of cheese is obtained. If the cheese is not intended to be used in desserts, it can be salted, pepper and add various ingredients. Take the pan and colander. The gauze must be folded five times to get a dense structure. Put a colander on the pan and put its gauze on the bottom. Put chilled sour cream in a slide. Fat sour cream will make fat cheese. If sour cream is low-fat, then there will be a lot of whey, but mascarpone will turn out a little. The resulting whey can be used in pancake or pie dough. Keep in mind that sour cream should be very fresh. Tie the cheesecloth tightly so that it tightens well. Put a heavy object 2-4 kg in weight on top. Put it all in the refrigerator for three days. Just in three days the whey will drain and you will get a delicious and tender mascarpone cheese. It can be smeared on bread, used as a basis for cream and so on.

Separate the whites from the yolks and arrange them in different glasses. Put thirty grams of sugar in each. Whip both mixes until foam with a clean mixer. Combine them in one bowl.   1. 325 grams of coffee.
  2. 50 grams of powdered sugar.
  3. 250 grams of mascarpone.
  4. 250 grams of fat cream.
  5. 4 yolks.

  7. 25 grams of alcohol.

First, prepare the coffee syrup. Take an espresso - one hundred twenty five grams. Do not use instant coffee. Cook coffee on a stove to reduce the volume by ten times.

While cooked, make a cream. 250 grams of mascarpone warm a little in the microwave. Beat 250 grams of cream in a bowl until soft peaks and until set aside.
