First step. Bake almond cakes
The “royal” cake came from a ritual biscuit. And by tradition, the dough for him should be almond. It is good to have nut kernels already ground to a powder state. If you don’t have almond flour , you have to tinker. It is necessary to scald the nucleoli with boiling water, remove the brown peel from them, and then grind in a blender. Take 75 grams of almond flour and mix it with 90 g of powdered sugar. In another container, beat two to three egg whites to stable peaks. Add 35 grams of powdered sugar to them. Continue to beat for another ten seconds. And only then mix both masses. Turn on the oven 160 degrees. We cover the baking sheet with parchment. Almond dough is best placed in a pastry bag, but with dexterity you can do without it. Gently squeeze (or lay out with a spoon) on parchment paper two cakes with a diameter of 20 centimeters. We send to bake until golden brown.
Stage two: make chocolate mass, cream and mousse
First, make whipped cream with powdered sugar. There should be a lot of them (480 grams for the “Royal” cake and another 240 g for icing). Remove whipped cream in the refrigerator. We drown 40 g of milk chocolate in a water bath. Add 80 g of biscuit cookies, crushed into crumbs. We put in this mass and 160 grams of Nutella type chocolate paste. All mix well. From 70 grams of sugar and a quarter cup of water we prepare syrup. While still hot, pour it into the egg yolks and beat at high speeds. Pour this slightly viscous mixture into melted dark chocolate (240 g). Mix and add chilled whipped cream.
Cake making
So, we have: two almond cakes, chocolate pasta and mousse. Now it's time to put the Tsar’s cake together. Let the first cake remain on the parchment. Set the cake mold on it. Grease the cake - and rather thickly - with chocolate paste. We fill all the voids between the tortoise maker and the first layer with mousse, which we gently squeeze out of the pastry bag. We put the second cake without pressure. Repeat the whole procedure. First, pasta, then chocolate mousse. Align its edges with a knife.
Make icing
Soak six grams of gelatin for ten minutes in cold water. Bring 30 grams of milk and sugar to a boil. Add 60 grams of cocoa powder. Mix. Carefully introduce the remaining whipped cream. We break sixty grams of dark chocolate into pieces. Pour in a creamy mixture with cocoa. Stir until chocolate is completely dissolved. At the end, add the swollen gelatin. Mix again. We take out our “Tsar's” cake from the refrigerator. Remove the ring. Pour the top and sides of the cake with chocolate icing. Level the surface with a knife. And at will we decorate.

Chop 100 grams of butter into arbitrary small pieces. Put a saucepan on the fire with two tablespoons of honey and one teaspoon of baking soda. After two minutes, the mixture foams and becomes a beautiful golden color. Remove the saucepan from the heat and add the butter and half a glass of granulated sugar. Stir until smooth. When it cools down a little, drive two eggs into it. Stir again. And we begin to sift into a saucepan a glass of white flour of the highest grade. Knead the dough from time to time. It should be the consistency of a very thick farm sour cream. As in the previous recipe, squeeze the dough onto a baking sheet covered with cooking paper. And bake a honey cake at a low temperature for about twenty minutes.
Cooking cream
To make royal honey cake, the recipe suggests using sour cream. But first, soak a handful of prunes in warm water and bake 100 grams of walnut kernels in a dry frying pan. Then cut the dried fruit into small pieces. But the nuts will be crushed in a mortar or a simple rolling pin. A pound of fat sour cream mix with sugar to taste. Put in the refrigerator. If you do not grab it, you can beat it a little, but it is better not to do this. Add prunes to one part of the sour cream, and nuts to the other. Leave only a few kernels and dried fruits for decoration. The third part of the cream will be left without additives. Cut the cake lengthwise into two equal parts. First, generously spread cream with prunes. Let's wait until it is absorbed. Place cream with nuts on top. Cover with a second cake. Now let's try to step back a little from the classic recipe. First, we prepare an impregnation of half a can of condensed milk and 100 grams of sour cream. Put it in the refrigerator. For cream, beat 200 grams of butter with the remaining condensed milk. Two bananas are peeled and mashed. Add to the cream, which we also put to cool in the refrigerator. We make the dough in the same way as in the previous recipe. But the resulting cake is not divided into two, but into three parts. Grease them first with impregnation.
