Language in our time is rightfully considered a delicacy. It has a delicate delicate taste and is also very nutritious. Basically, they use beef tongue and very rarely pork in cooking. It all depends on your preference.
Before starting cooking, it should be soaked for some time in cold water. They do this in order to make it easier to clean and rinse. After that, boil with the addition of a variety of spices and, of course, salt. We cook the language for three hours. Determining readiness can be simple, just pierce it with a fork. If the tongue is soft, then you can remove it from the pan. Letting it cool a little, carefully remove the skin, making sure that the meat is not removed with it.
And then we proceed according to the selected recipe. You can serve it as a separate dish, make a tongue salad or make a delicious casserole. I offer some delicious and original recipes with the addition of this delicacy.
Tongue salad
It is prepared quite simply and quickly. Due to its appearance, it is perfect for a festive table.
To prepare it, we need: a pound of beef or pork tongue, pickled champignons in a jar, four eggs, green peas (frozen), a slice of hard cheese, mustard, mayonnaise, salt.
Preparation: thoroughly rinse and cleanse the tongue with a stiff brush. We put it in a pan, fill it with cold water and put it on a big fire. After the water boils, remove the foam, salt, reduce the heat and cook for about three hours. You can check the readiness by piercing the tip of the tongue with a fork, if it came in easily, then it is time to remove from the fire.
Then we take out the finished delicacy and put it in cold water, where we carefully remove the skin and cut into slices.
Mushrooms cut into cubes.
Boil the eggs in a steep and rub on a coarse grater.
We also grind the cheese.
Cucumbers cut into cubes.
Defrost green peas in a bag, otherwise it will dry out and wrinkle.
Mix mayonnaise with mustard.
Lay out the salad from the tongue in layers:

3. layer - tongue plastics
4. layer - sauce again
5. layer - pickled cucumbers
6. layer - eggs
7. layer - sauce again
8. layer - grated cheese
9. layer - sauce
10. final layer - peas
A tongue salad is ready and you can serve it to the table. If desired, it can be decorated with greens.
The next salad with tongue and mushrooms is very unusual, if only because it is served warm. It is prepared quickly enough and it turns out very tasty and satisfying.
For its preparation you will need: tongue, mushrooms, asparagus beans, onions, mustard, pepper, sesame, salt.
Preparation: thoroughly rinse our delicacy and boil until tender in slightly salted water. We take out the finished tongue from the pan and, keeping it under a stream of cold water, clear it from the skin. Cut it into thin strips. Mushrooms are cut into large pieces and fry with half rings of onion in olive oil.
Boil the asparagus beans in salted water and put in a cup with the tongue and mushrooms. All products must be warm.
In a pan where mushrooms were fried with onions, put two tablespoons of mustard and add one soup ladle of any broth. Mix well and bring to a boil. Pour tongue salad with mushrooms with this sauce and serve warm to the table.
As a decoration, sprinkle with sesame seeds on top. To improve their taste, bake them in a hot frying pan for five minutes and stirring constantly.
