One of the most popular orange-filled pie recipes is one that doesn't need to be baked. The fresh aroma of oranges gives it a twist, and the simplicity of preparation does not require special skills and does not take much time. In winter, such a cake is especially relevant, because the taste of oranges improves mood.
Simple shortcrust pastry dough with orange filling
What you need for the test:
- sweet cracker (crushed) - 400 g;
- sugar 1/4 cup;
- ground cinnamon to taste;
- softened butter - 60 g.
Grind the cracker into crumbs, add butter, sugar, cinnamon and mix well so that the oil soaks the crackers. This dough should be laid tightly in the mold and form a side and the bottom of the pie. We put the mold in the oven for ten minutes at 180 degrees, so that the color of the cake becomes golden. When the cake is cooked, it will be necessary to cool it.
Cooking stuffing
Now we are going to prepare the orange filling.
We will need:
- corn starch - 1/2 tablespoon;
- sugar - one glass;
- sour cream - one glass;
- freshly squeezed orange juice - 100 g;
- butter - 50 g;
- orange zest - one tablespoon;
- milk - one glass;
- egg yolks - three pieces;
- cream with a fat content of 30% - 200 g.
Preparing the filling is very simple. According to the cooking method, it resembles a custard. In a saucepan, mix sugar with orange juice, starch, zest, yolks and milk. Boil it should be on a very low fire, not forgetting to stir with a whisk. In the finished filling you need to add oil and mix well to melt it. Now cool it for about fifteen minutes and add sour cream. Pour the finished stuffing onto the cake and put it all in the refrigerator. Now whip the cream with a few tablespoons of powdered sugar and spread them on the cake.
Orange-curd pie
This cake looks like a cheesecake, but oranges are added to it, which gives it a piquancy.
What will be needed for the test:
- butter - 200 g;
- flour - two glasses;
- eggs - two pieces;
- a glass of sugar.
For orange filling:
- oranges - two pieces;
- sugar 3-4 tablespoons.
For the filling of cottage cheese:
- fat cottage cheese - 0.5 kg;
- sugar - 100 g;
- 1/2 sachet of vanilla sugar.
Fill:
- sour cream 20% - 300 g;
- sugar - 100 g;
- eggs - two pieces;
- 1/2 tablespoon of orange peel.
This orange-filled pie is very simple to make. Add sugar to the melted butter and beat. Then add the eggs and beat again. Knead the dough quickly. If it is soft, then you can add more flour. You cannot knead the dough for a long time, otherwise a lot of gluten will stand out and the dough will be tough. Roll it into a ball, wrap it with cling film and put in the refrigerator for about half an hour.
At this time, fill the oranges with very hot water and leave for a few minutes. Then drain this water and repeat this a couple more times. This will help remove the bitterness. Cut them, remove the seeds and grind in a blender. Put in a saucepan, add three tablespoons of sugar and put the pan on fire. After boiling, cook for twenty minutes, stirring occasionally. The filling should thicken. Cool. Add vanilla sugar and granulated sugar to the cottage cheese and grind them until smooth. Mix one hundred grams of sugar with sour cream and an egg.
Preheat the oven to 180 °, roll out the dough, put it in a mold. When the dough is leveled, put the orange filling, and then the curd. Pour sour cream on top of the pie and sprinkle with orange zest. We put it in a preheated oven and bake for 40-45 minutes. Before serving, the cake should be cooled.
Lemon Orange Tart
Ingredients:
- sour cream - 200 g (you can use fat yogurt or yogurt instead of sour cream, and then you do not need to extinguish soda with vinegar);
- butter - 200 g;
- wheat flour - 200 g;
- the egg is one;
- sugar - one tablespoon;
- half a spoon of tea soda;
- two oranges;
- 1/2 lemon
- vinegar - 1/2 teaspoon;
- 50 g of grated dark chocolate.
Oranges need to be cut, remove the seeds from them and scroll in a meat grinder. You can, of course, grate on a regular grater, but it will be more difficult. We rub the zest of lemon and squeeze the juice out of half, mix everything with oranges.
Cooking the dough. Grind sugar and egg, add softened butter, sour cream, soda, flour, vinegar (remember that if we do with kefir, then vinegar is not needed) and mix well. In a greased form (preferably detachable), put half of the finished dough, oranges with lemon, pour in chocolate chips and cover with the remaining dough. We put in an oven preheated to 180 ° and bake for about half an hour. With a toothpick, check the readiness of the cake. Let cool a little and serve a pie with orange filling with tea or milk.
