An ordinary person who is not very keen on various cuisines of the world knows several varieties of dough: yeast, puff, extract, fresh, custard. They are very often used in the preparation of a variety of dishes. In Turkey, there is another kind of dough - kadaif. It tastes the same as a regular unleavened one, but it has the appearance of thin threads that look simply stunning. Therefore, no matter how simple the dessert is, with this test it immediately becomes a culinary masterpiece.

To prepare the Kadaf dough at home, you need to prepare the following ingredients:

  • 200 g of ordinary wheat flour;
  • 180 ml of water;
  • a teaspoon of freshly squeezed lemon juice;
  • 1-2 teaspoons of olive oil;
  • a small amount of salt.

How to make a dough?

To make cooking as simple as possible, it is recommended that you follow the step-by-step instructions for preparing a homemade Kadaif prescription test:

  1. Take a deep bowl, put flour sifted through a sieve into it.
  2. Add the required amount of lemon juice, salt, water and olive oil. The recipe does not provide, but it is not forbidden to add one egg, in which case the dough will be more delicious.
  3. Stir all ingredients with a hand whisk or mixer. A homogeneous mass should be obtained. The presence of flour lumps is not allowed, therefore it is recommended to strain the batter through a fine sieve. Note! Cadaif should be liquid, but not too much. The dough should not spread in the pan. If necessary, you can add a small amount of flour and mix thoroughly again.
  4. Now the dough must be poured into a pastry bag and take the thinnest nozzle. If such a device is not available, then you can use the usual file for papers, making a small hole in the corner.
  5. Put the pan on fire, grease it with vegetable oil. Attention! Lubricate with oil, not pour it, otherwise the dish will be spoiled. Squeeze thin threads from the dough into the pan using a bag.
  6. If the pan is sufficiently well heated, then it is necessary to remove the dried cadaif after 15 seconds. Frying should only be on one side.

Quite often, when freezing, the mistresses make mistakes that lead to the fact that the dough is frozen in a single piece, therefore, if necessary, use only some part, you have to defrost everything at once. When the finished dough is placed in a plastic bag, you need to put it in the freezer and periodically come and mix the kadaif. In this case, all the threads are frozen individually, and it will be possible to take the required amount of product.

  • Kadaif dough - 400 g.
  • 400 g of sugar (for the preparation of syrup).
  • Just a little cardamom (less than half a teaspoon).
  • 200 g of nuts or peanuts (you can take what you like more).
  • Dried fruits - 100 g (it can be raisins, dried apricots, etc.).
  • A small amount of butter.

How to cook?

If the dough is already ready, then cooking kunafa will not take much time and effort. First you need to boil the sugar syrup. To do this, take a small stewpan with a thick bottom, pour 200 ml of pure water on the bottom, pour 400 g of sugar all over. Turn on heating below average. Add a small amount of cardamom, you can also use freshly squeezed lemon juice to improve the taste. Cook for 5-7 minutes.

Now you need to peel the nuts and soak dried fruits in hot water. Take a baking dish. Kunaf can be done both in one general form, and in several small (portioned). If cooking will be carried out in one container, then put half of the dough on the bottom, and do not forget to grease the form with butter. Put nuts on the top, it is recommended to leave a little to sprinkle on the dish on top as a decoration. Then lay out the dried fruits all over the plane, again lay out a layer of the finished dough.

Preheat the oven to 200-220 degrees, bake this Turkish dish for 10-20 minutes. Readiness should be checked by the color of the test. It should be brown. When the dish is ready, it must be abundantly poured with sugar syrup and set aside for a few minutes, let the mass become more tender and pleasant to taste. In some cases, people add honey to the syrup.
