Cottage cheese and jelly cake with fruits is an excellent delicacy that even a schoolboy can cook, especially when it comes to dessert without baking. There can be many varieties of this product - it can consist of several layers of jelly, as well as contain crust of dough. The most interesting recipes are presented below.
Strawberry Option
This is a very original cottage cheese and jelly cake with biscuit and fruit. The recipe suggests using strawberries and strawberry jelly, but you can be imaginative and use any berries and fruits. This dessert consists of three layers, and for their preparation will require the following.
For vanilla cake:
- 3/4 cup flour;
- 1/4 tsp baking powder;
- 1/4 tsp baking soda;
- some salt;
- 4 tbsp. l unsalted butter;
- half a glass of sugar;
- 1 large egg;
- 6 tbsp. l milk;
- 1/8 cup plain Greek yogurt;
- 1 tsp vanilla extract.
For the curd layer:
- a glass of greasy whipped cream;
- a glass of powdered sugar;
- 240 grams of soft cottage cheese or cream cheese;
- one and a half tsp vanilla extract;
- 2 tbsp. l cold water;
- one and a half tsp gelatin.
For the strawberry layer:
- 500 grams of fresh strawberries, peeled and cut in half;
- 2 packets of dry strawberry jelly;
- 2 cups boiling water.
How to make such a dessert?
This recipe for cottage cheese and jelly cake with fruits is carried out in several stages. Preheat the oven to 180 degrees in advance, cover the round cake pan with parchment paper, grease with oil, set aside.
In a bowl, combine flour, baking powder, baking soda, and salt. Melt the butter in a small saucepan over low heat and set aside to cool.
Pour the melted butter into a large bowl and mix with sugar at an low speed using an electric mixer, then beat together with the egg, milk, yogurt and vanilla. Slowly add dry ingredients to this mixture and mix at low speed until the mixture is homogeneous.
Pour the mixture into the finished form and bake for 18-20 minutes (until the toothpick inserted in the center is clean). Let the cake cool in shape for 10 minutes, then transfer to a stand for complete cooling. After that, put it on a large flat plate. Place a round spring shape on it and fasten it so that the biscuit is at its bottom.
How to make a curd layer
Dissolve one and a half tsp. gelatin in 2 tbsp. l cold water and leave for a few minutes, then put in the microwave or place in a hot water bath for complete dissolution, set aside for cooling. Beat cottage cheese or cream cheese until light and airy.
Whip the cream until soft peaks form, gradually add the powdered sugar and continue to whip until the peaks form. Add vanilla extract and dissolved gelatin, then cream cheese and mix. Distribute this mass over the chilled biscuit and refrigerate for 30 minutes.
Berry layer
Dissolve strawberry jelly in 2 cups boiling water and set aside to cool to room temperature. Wash, peel and cut the strawberries in half lengthwise, then lay it in two or three even layers over the curd jelly. Pour the jelly, cooled to room temperature, onto the berry (the curd layer will melt if it is too warm).
Cool until jelly is ready, then draw a thin knife around the edges of the mold to the bottom. Remove the form and serve the finished curd-jelly cake with fruits.

Any jelly dessert looks very beautiful, but you can always make it even better. So, you can prepare a curd-jelly cake with fruits without baking with tangerines, mint leaves and blackberries. To prepare it, you will need the following.
Peppermint layer:
- half a glass of sugar;
- a glass of hot water;
- 1 tbsp. l lime juice;
- 4 sprigs of fresh mint;
- 2 packets of gelatin;
- a glass of blackberry;
- several tangerines;
- one and a half glasses of cold water.
Curd layer:
- one and a half glasses of water;
- a quarter cup of sugar;
- 2 sachets of gelatin;
- 250 grams of soft cottage cheese or cream cheese.
Cooking mint cheese
In a small saucepan, prepare a glass of liquid syrup from sugar, water and lime juice. Once it is ready, remove it from the heat and add leaves from four sprigs of mint. Leave on for 5 minutes, then remove the leaves.
Meanwhile, pour 2 packets of gelatin in a glass of cold water in a large, heat-resistant bowl. Let it brew for one minute, then add hot syrup. Stir until completely dissolved. Add the last half a glass of water. Pour this liquid into the mold.
Gently place mint leaves, blackberries and mandarin slices in it. Fold everything in one layer to make your cottage cheese and jelly cake with fruit look neat. Place the mold in the refrigerator to freeze the jelly. Once the first layer is hard, it's time to make a second.
Mix water and sugar and bring to a boil. Pour 2 sachets of gelatin with half a glass of water in a large bowl. Let stand for 1 minute. Add hot water with sugar, mix until completely dissolved.
Beat with a mixer the curd or cream cheese until splendid. Add it to the mixture with gelatin and mix thoroughly. Gently spread over the first layer. Refrigerate.
Once the fruit curd-jelly cake is ready, place the mold in a bowl of hot water for a minute to free the sides of the jelly. Then turn the pan over and gently place the dessert on a plate.
