In order to spend time in a pleasant company or to celebrate any special occasion, most people choose restaurants. The popularity of these institutions is consistently high, and there are a number of fairly good reasons for this.
Among them are the high quality of service, and the opportunity to please yourself with
exotic dishes, and, of course, the special atmosphere that prevails in these institutions. Some of them have such a high status that their visit in itself can become a solemn moment.
One of the main attributes of a self-respecting institution is the special table setting in the restaurant, which can be used to judge its class and the level of professionalism of the staff. It will be discussed.
What is serving? This is a special type of table decoration (even, in a sense, the ritual of preparing it for a meal), involving a special arrangement of cutlery, objects and decor elements. The table setting in the restaurant depends on the intended menu and the category of the institution itself. It is these components that are considered basic and determine the number and types of cutlery, plates and glasses.
Types of Serving
Table setting of the restaurant and cafe can be preliminary and festive. Pre- table setting is a minimum
the number of appliances and utensils corresponding to the service time.
For example, a pre-serving for breakfast will consist of a plate (usually a pie), a cutlery, a glass of water, a teaspoon and a napkin. Sometimes it includes a butter knife and an additional snack plate.
When pre-serving the dining table, a snack cutlery is added to it.
Pre-table setting in the restaurant in the evening is the most complex. A small dining room, pie and snack plates, cutlery (excluding spoons), wine glasses, spices are displayed on the table. Also, before evening service, tables are decorated with additional decorative elements (vases, candlesticks).
Depending on the change of dishes or at the request of customers, they are provided with new and additional items of utensils and appliances.
In this case, special attention should be paid to the fact that the table setting in the cafe is slightly different from that which will be offered in the restaurant. The rules for arranging dishes themselves do not change. But cafes can afford tablecloths and napkins of a more modest quality (or even dispense with them), a smaller variety of
types of dishes , depending on their class and the variety of dishes on the menu. For restaurants in this regard, the requirements are higher.
Generally accepted, depending on the menu presented and the type of meal, four basic types of serving are considered:
- tea / coffee table;
- Buffet / Buffet
- table of cold dishes;
- dining table (hot dishes).
When serving in a restaurant, a linen tablecloth must be on the table. The same should be napkins. It is unacceptable to expose "mixed" dishes and appliances.
Some nuances
Table setting in a restaurant has a number of nuances that must be strictly performed in institutions of any category. So, for example, the center of the tablecloth should always coincide with the center of the table, and the folds should be located strictly perpendicular to its edges, completely covering the legs, but not lower than the seat level. The pepper shaker and salt shaker should only be half full. Bottles with sunflower oil, vinegar and other sauces are served only if necessary. The only exception is mustard, which must be served if there is a meat dish in the order. If there is no snack plate on the table, then a four-piece cloth napkin should be used instead.
