Lacy pancakes on kefir are very tasty and unusually thin. They are baked from viscous batter, enriched with oxygen. Each mistress has her own recipe for preparing such a treat. Therefore, in today's article the most interesting options will be presented.
General recommendations
The secret of thin pancakes lies in the preparation of the dough. It should be sufficiently liquid and as saturated as possible with air bubbles. To saturate the dough with oxygen, a certain amount of slaked soda is added to it. Good results are achieved when using flour, twice sifted through a fine sieve.
The already prepared and oxygen-enriched dough is insisted before baking. Due to this, the duration of fermentation processes increases, which means that the number of air bubbles increases.
You also need to remember that the thickness of the finished pancakes depends on the amount of dough poured into the pan. The smaller it is, the thinner the baked product will be.
Classic version
Those who have not yet decided what to cook for breakfast, you can recommend making pancakes lace on kefir. The recipe for this simple treat involves using a specific set of ingredients. So check in advance if you have everything you need. In this case, you will need:
- Half a liter of kefir.
- Four full tablespoons of wheat flour.
- Three large eggs.
- A tablespoon of sugar and melted butter.
- A pinch of salt.
- Half a teaspoon of soda.
To lubricate ready-made lace pancakes (on yogurt or milk - in principle, it is not so important), stock up in advance with a pack of good butter.
Process description
A few hours before starting work with the products, kefir and eggs are removed from the refrigerator and left on the table. When they warm to room temperature, you can begin to prepare the dough. The eggs are broken into a deep bowl, combined with soda, granulated sugar and a pinch of salt. All intensively beat until foam appears and put aside.
In a separate bowl, melted and slightly cooled butter is combined, flour and kefir sifted through a sieve twice. All knead well, trying to get the most uniform consistency. Beat eggs are introduced into the resulting mass and pancakes (on kefir) begin to bake. Thin lace products are obtained only in a well-heated pan with Teflon coating and low sides. A little dough is poured into the center of the dish and spread it over the entire surface. Fry on both sides until a golden hue appears. Ready pancakes are stacked on a flat plate and greased with butter. They are served with jam, sour cream, honey or condensed milk.
Choux pastry
This recipe for thin lace pancakes on kefir is very different from the previous one. It is interesting in that it involves the use of boiling water. Thanks to the addition of hot water, finished products are softer and more flexible. Therefore, they can easily wrap various fillings. Before you start working with products, be sure to check whether you have at hand:
- Two hundred grams of wheat flour.
- A glass of kefir.
- A tablespoon of vegetable oil and granulated sugar.
- A pair of chicken eggs.
- 1/3 teaspoon of soda and salt.
- Half a glass of boiling water.
- Twenty grams of unsalted fat.
Sequencing
In a volumetric vessel, eggs, sugar and salt are combined. Whisk it well with a whisk. Boiling water is gradually poured into the resulting mass, without ceasing to constantly stir it. Then, kefir, preheated to room temperature, and baking soda are sent to the same bowl. Whisk again with a whisk and begin to pour the flour sifted through the sieve in advance.
The resulting homogeneous dough is infused at room temperature. Twenty minutes later, add vegetable oil to it and start to bake lace pancakes. On kefir with boiling water they turn out incredibly tender. The dough is poured into the middle of a preheated pan, greased with a piece of fresh unsalted fat, and spread over the entire surface. Fry products for a minute on each side until a golden hue appears. If desired, such pancakes can be stuffed with minced meat or liver pate. By adding a little more sugar to the dough, you get a sweet dessert that goes well with jam or orange caramel.
