All spicy lovers will like seasoning like adjika. She is able to whet the appetite and add spice to the dishes. Adjika comes in two colors - red and green. Its main components are: red or green hot peppers, salt, spices, garlic, horseradish and even walnuts. We offer several ways to make seasoning.

This classic recipe for red spicy adjika has been known since ancient times. Ingredients:

  • Capsicum in an amount of 500 g;
  • cilantro seeds (otherwise - coriander) - 15 g;
  • basil (fresh or dried) - 10 g;
  • dill (dried or fresh) in an amount of 10 g;
  • savory in the amount of 10 g;
  • 7-8 garlic cloves;
  • nuts and salt.

Cooking technology

Adjika without cooking is ideal for giving a special, spicy taste to dishes of vegetables, meat or fish. To get the sauce, just mix all of these components. Before that, garlic and pepper are ground in any way. Knead nuts into small crumbs, and chop fresh herbs with a knife. Salt is added to taste. This recipe is classic and does not include tomatoes.

The seasoning prepared according to the following recipe is very burning. Its composition:

  • Cayenne (green or red) peppers in an amount of 1 kg;
  • peeled garlic - 500 g;
  • coarse salt in the amount of ¾ faceted glass;
  • half a glass of different seasonings (for example, dill, hops-suneli, coriander).

Prepare pepper only in rubber gloves, otherwise you may get burns. Cut the pods, remove the stalks. Grind the peppers in any way. Peel and grind garlic until gruel. Mix the ingredients. Put salt and seasoning. This adjika without cooking is very sharp, it is not recommended to use it for people with disorders of the stomach. If desired, you can slightly soften the taste of seasoning. Instead of a kilogram of hot pepper, take 800 grams of sweet and 200 grams of hot.

To prepare a seasoning with tomatoes, you will need:

  • ripe tomatoes in the amount of 3 kg;
  • sweet pepper in the amount of 1 kg;
  • garlic - 500 g;
  • hot pepper in an amount of 150 g;
  • half a glass of salt;
  • 3 tablespoons of sugar.

Cooking technology

Adjika without cooking or “cold” adjika is very simple. All vegetables should be washed and cleaned (remove seeds, stalks, etc.). Using a meat grinder (blender), grind the ingredients. Pour in salt and sugar. Mix. Leave on for 24 hours in a cool place. Then drain the excess liquid (if any) and pack in containers or jars. Store in the cold.

Adjika without cooking: recipe with apples

To make adjika you need:

  • ripe tomatoes in an amount of 5 kg;
  • bell pepper in the amount of 1 kg;
  • apples (preferably acidic and hard varieties) - 1 kg;
  • carrots in an amount of 500 g;
  • peeled garlic - 500 g;
  • hot pepper - the amount is determined by taste (the sharper you love, the more you add);
  • salt and sugar.

Cooking technology

Wash and peel vegetables and apples. Grate the carrots. Grind all other ingredients with a meat grinder. Mix, add salt and sugar. Allow to infuse overnight, then pack in containers and place in a cold place.
