Soup is a very common dish, as without it a complete meal just does not seem to be. They use it as the first and main dish because the soup has a beneficial effect on the digestive system. Meat broth and the vegetables contained in it contribute to the stimulation of appetite and better absorption of food.
Cooking soups is not at all a difficult process, you just need to know the cooking recipe, and you can dream up a bit.
I offer some simple recipes for soups that are quite nutritious and healthy.
Millet Duck Soup
The duck soup is very hearty thanks to the greasy bouillon.
We need: middle duck, a glass of millet, a little celery root, a small carrot, medium onion, parsley root, two bay leaves, 10 peppercorns, ground pepper, fresh dill and salt.
Cooking soup: carefully sort and wash millet in a large amount of water, put it in a sieve, and let the water drain completely.
We remove the internal fat from the duck and grind it. Fat, we need three tablespoons.
We heat the pan, put two tablespoons of duck fat, add finely chopped onions and fry until it becomes golden. Then we fall asleep millet and continue to fry for another five minutes.
We put the duck in a pan, fill it with water, throw half of the unpeeled bulb and put on fire. As soon as the water boils, reduce the heat and cook for 5 minutes. After that we take out the duck, and pour out the broth.
We take a pan with a thick bottom, spread the remaining fat, chopped carrots and celery, lightly fry. Add the duck sliced into pieces, fill with two liters of water, bring to a boil and remove the resulting foam. We put bay leaf, peas of pepper and cook for about an hour over low heat.
Serve the duck soup to the table hot, right from the stove, sprinkled with herbs.
Duck noodle soup
Necessary ingredients: duck carcass, 300 grams of noodles, three liters of water, two medium carrots, parsley root, two onions, 25 grams of butter, four tablespoons of green peas (canned), several olives, fresh parsley and dill, two bay leaves, 10 peppercorns and salt.
Preparation: thoroughly rinse the duck under a stream of clean water, put it in a pan and fill it with water. Add the peas of pepper, chopped parsley root and set to boil on fire. Cook until duck meat is tender.
We cut the prepared and chilled meat into cubes, and cook the noodles in the broth.
We chop the onions, cut the carrots into cubes and fry them in a pan, in butter. Then add chopped olives and green peas.
In the broth where the noodles are cooked, put the frying, pieces of meat and bay leaf. All salt to taste, pepper and cook for about 15 minutes over low heat.
Pour the duck soup into plates and decorate with herbs.
Tuna soup
This soup is prepared quickly and easily.
We will need: a jar of tuna in oil, 3-4 medium potatoes, one carrot, onion head, a bunch of celery, spices and salt to taste.
Preparation: Cut the peeled potatoes into medium cubes, grate the carrots, chop the onions into thin half rings.
We put the pan on the fire and after it boils we throw the potatoes, salt and cook for 10 minutes. After that, add carrots, onions and continue to cook until the potatoes are ready.
A few minutes before cooking, add tuna, chopped celery and leave the soup to brew for 10 minutes.
The recipes for soups given are quite substantial, tasty and, most importantly, include products that are always at hand. Add variety to your daily menu and treat your loved ones to delicious dishes.
