Seafood soup. Simple, original, useful

How to cook seafood soup so that it turns out delicious and most importantly, satisfying? Everything is very simple - the more ingredients you add to your soup, the richer and richer it will turn out. The classic seafood soup includes fresh vegetables and broth, but each kitchen makes its own changes and additions. Depending on which cuisine your soup will belong to and you need to choose the ingredients: shrimp or squid, mussels or oysters. You can also fantasize by making seafood soup with cream or milk, tomato or cream soup. Here are some recipes from different cuisines:

1. Spanish seafood soup.

Required:

  • Fish broth - 1 liter
  • Peeled shrimp - 150 grams, unpeeled - 10 pieces
  • Squid rings - 100 grams
  • Mussel Shells - 10-15 pcs.
  • Fish fillet - 2-3 slices
  • Potato - 3 pieces
  • Sweet pepper - 1 pc.
  • Tomatoes - 2 pcs.
  • Onion - 1 pc.
  • Garlic, black pepper, bay leaf, saffron
  • Fresh greens and salt

It is necessary to cut peppers, potatoes and tomatoes into small cubes. Peel and fry the onions and garlic in a pan. Add the chopped vegetables there and simmer until the pepper is ready. After that, transfer everything to a blender and grind. We transfer the whole mass back to the pan and fill it with broth. Now we start seafood. Peeled shrimp and cut the fish fillet. Spread with washed unpeeled shrimp in a broth with vegetables. All together you need to simmer on low heat until the fish is ready. In a separate pot, boil the potatoes until they are half-cooked. Then we combine all the components in one pan, add saffron, bay leaf. Spanish seafood soup is ready! Before serving, sprinkle with fresh herbs for decoration.

2. Italian seafood soup with cream.

Required:

  • Water - 400 ml
  • Cream 15% fat - at least 200 ml
  • Semi-sweet white wine - 200 ml
  • Seafood - 300 grams
  • Potato - 3 pieces
  • Leek - 1 piece
  • Dill, shrimp for decoration, salt, pepper

When deciding to make seafood soup with cream, you need to buy and use only the freshest cream with a fat content of at least 15%, but not more than 20%. Peel and chop the potatoes. We also cut the white part of the leek into rings. We put everything together in a deep pan and fry without adding oil and water until a golden crust is formed. After that, add water and simmer for about 15 minutes, until boiling. Salt, pepper and grind the whole mass in a blender. The resulting mashed potatoes must be transferred to a saucepan, after which we add cream and wine and bring to a boil. Fry seafood in a separate pan and transfer them to a pot with soup. When served, the soup is decorated with fresh herbs and shrimp.

3. Cheese and seafood soup

How to cook seafood soup with the addition of red fish and cheese? Very simple, you will need:

  • Water - 1 liter
  • Fillet of any red fish - 1 piece
  • Shrimp - 20 pieces
  • Cream cheese - 2 pieces
  • Potatoes, carrots and onions - 1 each
  • Olive oil, herbs, salt, pepper

Peel and cut the potatoes in neat cubes. Put it in boiling water. Finely chop the onion, and rub the carrots on a coarse grater. Fry them in olive oil. Grate the cream cheese and add to the potatoes. Mix everything thoroughly until the cheese is completely dissolved. Add the fried vegetables to the pan. Cut red fish fillet into cubes and cook with shrimp for 5 minutes. Then combine the vegetables with cheese and fish. Let it brew for at least 5 minutes, add herbs and can be served. The variety of options for such soups does not cease to amaze, and your personal attitude, which will certainly affect the taste of the resulting product, brings a special highlight to them.
