Sour cream sauce

Each sauce is prepared for a specific dish. Its ingredients should be combined with products whose taste it should enrich and improve. Sauces can be divided according to the method of preparation into cold (products are not subjected to heat treatment) and hot (heat treatment of ingredients is applied). They may also contain, or not, fillers in the form of flour or starch.

The liquid base is usually butter, milk, cream, water or sour cream, for example, when preparing sour cream sauce for meat. As additional ingredients, spices and seasonings are included, thanks to which the taste of the sauce is adjusted, which will be transferred to the main dish. In addition, a certain color is attached, which allows you to design a culinary dish.

The sauce can be basic, as well as derived from the main, to which a certain set of products is added. In this way, you can get sour cream sauce for fish, for pasta or vegetables.

Recipe 1

The main sour cream sauce is prepared from sour cream and flour. It is suitable for cooking various options. Ingredients required:

  • 2 tablespoons flour;
  • 5 glasses of sour cream;
  • salt.

4 glasses of sour cream are brought to a boil in a stewpan. By this time, heat the pan, pour flour on it with a thin layer and stir until it dries (it becomes crumbly, but does not change color), for about a minute. After which it is poured into the remaining cold sour cream, stirred and pour this mixture into boiling sour cream. Add salt and, stirring, cook for 3 minutes. Filter through a fine sieve. Served with fish meat or used to make more complex sauces.

Recipe 2

Sour cream sauce is cooked with tomato puree and paprika. It can be used for dishes of beef, veal, poultry or lamb. Ingredients:

  • 2 ½ cup sour cream sauce (prepared according to the recipe 1);
  • 50 g tomato puree;
  • 30 g of salted butter;
  • ½ teaspoon of paprika.

Heat oil in a stewpan and spread tomato puree, mix. Add paprika, salt and sour cream sauce. Boil for 5 minutes and filter through a fine sieve.

Recipe 3

Sour cream sauce with mushrooms is suitable for baking vegetables, potatoes. It can be served with fish and meat dishes. For cooking, you need products:

  • 1 cup (thin) sour cream;
  • 1 teaspoon with a hill of flour;
  • 1 onion, cut into small cubes;
  • 1 tablespoon salted butter;
  • 1 cup champignons (finely chopped);
  • salt;
  • pepper.

Sauté the flour in a frying pan and pour into a saucepan, in which the sour cream is already brought to a boil. Continually stirring, boil over low heat. Separately, fry the onion in oil, add the mushrooms, fry them until soft and spread them in the sauce. Stir, simmer for 3 minutes over low heat. Season with salt and pepper.

Recipe 4

Sour cream sauce cooked with horseradish is suitable for corned beef, boiled meat or can be used for baking meat in the oven. Ingredients:

  • 2 glasses of the main sauce (according to the recipe 1);
  • 1 tablespoon salted butter;
  • 1 tablespoon vinegar ;
  • ½ cup chopped horseradish root;
  • 6 peas of pepper;
  • salt;
  • Bay leaf.

Horseradish lightly passer in oil (color should not change), throw peas of pepper, bay leaf, pour vinegar and boil. The mixture is added to hot sour cream sauce, seasoned with salt and boiled for 7 minutes.

Recipe 5

Sour cream sauce is also great for fruit salads. Prepare it in a cold way. Ingredients:

  • 1 cup low-fat sour cream;
  • ½ cup orange juice (can be replaced with lemon or berry);
  • 1 tablespoon of orange or lemon zest (before chopping very finely, scald it with boiling water);
  • 2 tablespoons sugar;
  • ¼ teaspoon (or less) salt.

Sour cream in a blender is mixed with fruit juice, zest, sugar, salt are added and everything is mixed again.

Recipe 6

Cold sour cream sauce can be used to season vegetable salads. To prepare it, you will need the ingredients:

  • 1 cup low-fat sour cream;
  • ¼ teaspoon of citric acid;
  • ½ teaspoon of granulated sugar;
  • 2 tablespoons boiled water;
  • pepper;
  • a pinch of salt.

Citric acid is dissolved in water. Sour cream, sugar, salt, pepper and mix. Combine sour cream with a solution of citric acid.
