Lamb is considered very tasty meat. For baking in the oven, you can take various pieces. The lamb leg is especially good . You can cook it in the following way.
Recipe: lamb leg (in the oven) with green beans
For cooking, the following products must be available:
- a lamb leg weighing about 1.5 kg;
- vegetable oil with a volume of 30 ml;
- ziru, salt, coriander;
- garlic cloves - 3 pieces;
- onion - about 100 grams (2 heads);
- Dijon mustard - 3 teaspoons;
- green beans (chilli) - 400 grams;
- melted butter - 80 grams.
Bake lamb leg in the oven: cooking technology
1st step
Initially, a lamb leg, like any other meat, needs to be pickled. First, rub a piece on all sides with coarse sea salt. After, prepare a mixture of oil, mustard, ground pepper and coriander, zira, chopped garlic. If there is, then you can add sour plum juice (or a little fruit vinegar). With the resulting mixture, coat the leg, put in a bag. Pour the remaining marinade there and put the bag in the refrigerator.
2nd step
12 hours are enough for marinating. But if the leg lies for a day or two, then nothing bad will happen, just turn it over a couple of times in the bag so that the marinade is evenly distributed.
3rd step
Peel off the sticky grains of mustard from a piece and lay the meat in a sleeve. Twist the ends and place the lamb on a glass baking sheet or pan. To prevent the bottom of the piece from burning, put sticks under it and pour a little water. We bake the lamb leg in the oven for 20 minutes at 220 degrees, then lower the heat to 180 and hold for another hour.
4th step
At the end of time, cut the sleeve, turn the piece over to the other side. Again bake the lamb leg in the oven. But now in the open state and only 15 minutes, periodically pouring juice.
5th step
While we cook the lamb leg in the oven, we can think about a side dish. The meat goes well with vegetables, so we suggest stewing green beans. You can buy a package of pods in a store or use homemade blanks. Cut the onion into thin half rings. Melt the butter and slightly dip the onion in it. Boil green beans in boiling salt water (a few minutes), then, draining the liquid, add to the onion. Season the dish with chopped garlic, sprinkle with pepper, try on salt. Stew the beans for about 10 minutes. Before finishing, sprinkle the dish with fruit vinegar.
6th step
Lamb should already be cooked at the same time as the beans. Make sure the meat is cooked evenly on all sides. Pierce the leg with a sharp knife, transparent juice should go out of it. Now bake the lamb leg in the oven at minimum temperature. The essence of the procedure is to let the meat brew, soak back the extracted juice and become more tender and soft. 20 minutes are enough for this.
7th step
Place the lamb leg on a large dish, lay the stewed green beans next to it. Garnish the dish with vegetables. You can cook lingonberry sauce. It gives the meat extra flavor. It is easy to do. In a blender, grind half a glass of lingonberry with two to three tablespoons of sugar. Bring to a boil on the stove, season with pepper and pour the lamb leg. You have a dish that can be served on the festive table. Enjoy your meal!
